Breakfast potatoes with crispy shallots ✌️

The potato is the GOAT. No other vegetable even comes close to its greatness and one of our new favourite ways of paying homage is these breakfast potatoes. Lightly spiced and cooked with crispy shallots, then served with your choice of breakfast sides. Heaven.
Serves 3
???? 2 large potatoes, diced into cubes ???? olive oil ???? 1 tbsp vegan butter ???? 1 shallot, peeled + sliced ???? 3 garlic cloves, peeled + sliced ???? 1 tsp paprika ???? 1 sprig of fresh rosemary, leaves roughly chopped ???? salt + pepper ???? 1 small handful of fresh parsley, leaves roughly chopped
Add the potatoes to a pot of cold water. Bring to a boil, then reduce the heat and simmer for 10 minutes.
Drain the potatoes, tip them out onto a plate and leave them to cool fully.
Once the potatoes are cooled, drizzle a generous amount of oil in a frying pan on a medium heat. Then add the vegan butter and fry for 2 minutes until melted.
Tip the potatoes into the frying pan and fry for 15 minutes or until golden brown on all sides, turning frequently.
Next add the shallot, garlic, paprika, rosemary and generous pinches of salt and pepper to the frying pan. Fry for 2 minutes or until the shallots are crispy.

- Microwave the potatoes for 4-5 mins in batches, lay them all flat on a plate to soften quicker. This methods makes the cooking process faster - When cooking the potatoes, make sure you let them crisp up for 4-5 mins on mdeium high heat before adding the rest of the ingredients.
