The potato is the GOAT. No other vegetable even comes close to its greatness and one of our new favourite ways of paying homage is these breakfast potatoes. Lightly spiced and cooked with crispy shallots, then served with your choice of breakfast sides. Heaven.
Serves 3
???? 2 large potatoes, diced into cubes
???? olive oil
???? 1 tbsp vegan butter
???? 1 shallot, peeled + sliced
???? 3 garlic cloves, peeled + sliced
???? 1 tsp paprika
???? 1 sprig of fresh rosemary, leaves roughly chopped
???? salt + pepper
???? 1 small handful of fresh parsley, leaves roughly chopped
Add the potatoes to a pot of cold water. Bring to a boil, then reduce the heat and simmer for 10 minutes.
Drain the potatoes, tip them out onto a plate and leave them to cool fully.
Once the potatoes are cooled, drizzle a generous amount of oil in a frying pan on a medium heat. Then add the vegan butter and fry for 2 minutes until melted.
Tip the potatoes into the frying pan and fry for 15 minutes or until golden brown on all sides, turning frequently.
Next add the shallot, garlic, paprika, rosemary and generous pinches of salt and pepper to the frying pan. Fry for 2 minutes or until the shallots are crispy.

One-Pan Breakfast Potatoes
Servings: 4-6
INGREDIENTS
3 russet potatoes, cut into bite-size pieces
1 red bell pepper, diced
1 small white onion, diced
Olive oil, to taste
1 tablespoon rosemary
1 tablespoon garlic, minced
1 teaspoon paprika
1 teaspoon salt
1 teaspoon pepper
PREPARATION
1. Preheat oven to 500˚F/260˚C.
2. Place potato pieces, diced red bell pepper, and diced onion on a baking sheet.
3. Drizzle olive oil over everything and season with rosemary, garlic, paprika, salt, and pepper. Mix until evenly coated.
4. Spread coated potatoes, peppers, and onions out into an even layer.
5. Bake for 30 minutes, stirring every 10-15 minutes.
6. Serve with your favorite breakfast sides.
7. Enjoy!

5 Russet Potatoes
1/4 Onion- sliced
Salt to taste
Pepper
onion powder (optional)
paprika
parsley
thyme
3 tbsp oil (or more as needed)
2 tbsp unsalted butter (or more as needed)
3 tbsp Water
Season to your taste, I showed how to in the video. It's very easy, no measurements needed.
