Shakshuka - A typical Arabian scrambled eggs recipe. Perfect for breakfast.
Ingredients:
3/4 tbsp Extra Virgin Olive oil
1 Onion Chopped
1 Can of chopped tomato or sauce or fresh tomato slices
Salt to taste.
Red Chilli flakes or Green chilli
1/2 tsp Cumin
1/2 tsp Turmeric
6 Eggs Beaten
Chopped Coriander.

Serves 2-3
Recipe in English:
Ingredients:
-Pyaz (Onion) 2 medium
-Lehsan (Garlic) 1 clove
-Tamatar (Tomatoes) 4-5 medium
-Hari mirch (Green chili) 1
-Olive oil 1-2 tbs
-Namak (Salt) 1 tsp or to taste
-Lal mirch powder (Red chili powder) ½ tsp or to taste
-Kali mirch powder (Black pepper powder) ¼ tsp
-Paprika powder ½ tsp
-Dhania powder (Coriander powder) ½ tsp
-Anday (Eggs) 3
-Lal mirch powder (Red chili powder) to sprinkle
-Hara dhania (Fresh coriander)
Directions:
-Cut onion into cubes.
-In chopper,add onion,garlic,chop well & set aside.
-Cut tomatoes into cubes.
-In blender jar,add tomatoes and blend to make a puree & set aside.
-Chop green chili & set aside.
-In frying pan,add olive oil,chopped onion (approx. ¾ Cup) and cook for 4-5 minutes.
-Add tomato puree (approx. 1 & ½ Cups),mix well and cook for 10-12 minutes.
-Add green chili,mix well and cook for 4-5 minutes.
-Add salt,red chili powder,black pepper powder and mix well.
-Add paprika powder,coriander powder,mix well and cook until dries up.
-Add eggs one by one,sprinkle red chili powder,cover and cook on low flame for 1-2 minutes.
-Sprinkle fresh coriander & serve!

-Frying pan mein olive oil aur chopped pyaz (approx. ¾ Cup) dal dein aur 4-5 minutes kliya paka lein.
-Tamatar ki puree (approx. 1 & ½ Cups) dal ker ache tarhan mix karein aur 10-12 minutes kliya paka lein.
-Hari mirch dal ker mix karein aur 4-5 minutes kliya paka lein.
-Namak,lal mirch powder aur kali mirch powder dal ker ache tarhan mix ker lein.
-Paprika powder aur dhania powder dal ker ache tarhan mix karein aur sukh janay tak paka lein.
-Ek,ek ker ka anday shamil karein aur lal mirch powder chirak dein,dhak ker halki ancch per 1-2 minutes kliya paka lein.
-Hara dhania dal ker serve karein.

INGREDIENTS
¼ cup olive oil
1 medium onion, diced
1 red bell pepper, seeded and diced
1 Fresno chile, diced
4 garlic cloves, finely chopped
1 ½ teaspoons sweet paprika
1 ½ teaspoons smoked paprika
1 teaspoon cumin
1 (28 ounce) can whole peeled tomatoes
6 large eggs
Salt and pepper, to taste
FOR SERVING
1 small bunch fresh parsley, chopped
1-2 shallots
1 lemon
Fresh pita bread
Za’atar
Softened butter
Garlic, minced
COOKING METHOD
1. Preheat oven to 400°F.
2. In a large skillet over medium-high heat, add oil.
3. Once shimmering, add onion and peppers and saute for 6-8 minutes, or until golden brown. Reduce heat to medium-low and add garlic, paprika, and cumin and stir to combine. Cook for 1-2 minutes, or until fragrant and aromatic.
4. Add tomatoes, crushing them in your hands as they go into the skillet. Rinse can with a bit of water and add to skillet to get any remaining tomato juice. Simmer for TKTK minutes, or until the mixture reduces by 1/3rd.
5. While the tomatoes cook, heat pita bread in preheated oven. In a small bowl, mix together softened butter, salt and garlic. Slather over top of pita bread and finish with zaatar.
6. Once the tomato mixture is reduced, create 6 small wells using a large spoon. Crack 1 egg into each well and season each with salt and pepper. Cover and cook for 5-6 minutes, or until the whites are fully cooked, but the yolks are still runny.
7. While the eggs are cooking, make parsley and shallot salad. Serve immediately with pita bread and salad.
