1 c Mock Hollandaise Sauce
2 tb Chopped onion(optional)
2 tb Chop.green pepper(optional)
1 c Egg substitute
2 ea English muffins
4 ea Thick slices tomato
Similar to Eggs Benedict. Make 1 cup Mock Hollandaise Sauce and set aside. Steam onions and green pepper in a little water until soft, add egg substitute to make "scrambled eggs." Split and toast English muffins, place one slice of tomato on each muffin. Top with scrambled egg mixture and 4 tablespoons of Mock Hollandaise Sauce. Makes 4 servings ~

INGREDIENTS
3 russet potatoes, peeled and halved
6 slices bacon
5 large eggs
2/3 c. shredded Cheddar
1 red bell pepper, finely chopped
1/2 Onion, finely chopped
2 tbsp. chives, finely chopped, plus more for garnish
kosher salt
Freshly ground black pepper
DIRECTIONS
1. Preheat oven to 400°. Line a medium baking sheet with parchment paper. Using a melon baller, scoop out the center of the potato until completely hollow and you can see through it.
2. Place potatoes, wide side down, on a baking sheet. Wrap each potato in bacon, tucking in ends so they don’t unravel during baking. Bake 40 minutes, or until bacon is golden and crisp and potatoes are tender.
3. Meanwhile, make egg mixture: in a large bowl, whisk eggs. Stir in cheese, peppers, onions, and chives and season with salt and pepper. When potatoes are done cooking, pour egg mixture into the hole at the top of each potato until they are 2/3 full. Place back in the oven to bake for 12 to 15 more minutes, until no wetness is visible.
3. Remove from oven, garnish with chives, and serve.

Hello everyone ????
Today I made Gyeranjjim(korean style volcano steamed eggs)!
I'm going to use Ttukbaegi(Korean earthenware pot)
If you don’t have a Ttukbaegi, I recommend you use a cast iron pot or a small pot.
If you follow me, you can make korean style volcano steamed eggs
Simple and easy to make a savory flavor explodes korean style volcano steamed eggs!
* Ingredient
4 eggs, green onions, 6 tablespoons of water, 1/3 tablespoon of salt, sesame, sesame oil, cooking oil
[If you want to taste more soft, add 100ml of water instead of 6 tablespoons of water!
and Please adjust the amount of eggs according to the pot size.]
* Recipe
1. Slice green onion thinly.
2. Mix 4 eggs, 6 tablespoons of water and 1/3 tablespoon of salt in the mixing bowl.
3. Coat Ttukbaegi with cooking oil (or sesame oil).
4. Place the Ttukbaegi on low heat and pour the eggs.
5. Stir the egg so that it does not stick to the bottom and edge with a spoon.
6. Put the sliced green onion
7. When the egg is cooked 70-80%, cover with a lid larger than the pot.
8. Cook over low heat for 3 minutes.
9. Sprinkle sesame and sesame oil to complete.
* I recommend that you cook on a low heat, but if you think the progress is too slow, stir on medium heat and reduce to low heat when you cover the lid.
