Best Mini Brownie Bites - 2 Bite Brownies Made Simple and Quick
These mini brownies are one of my addictions. I first found them two years ago in the grocery store and have been buying them ever since. They are often referred to as two bite brownies, as you can literally eat them in two bites. They make a great snack with a cold glass of milk and a great lunchbox idea for the kids.
As always, there are a few changes you can make to the recipe. For example, you can add nuts such as pecans or walnuts. Additional spices can be added too. Some cinnamon or nutmeg would not be out of place or some vanilla extract.

pinch of salt
1/4 tsp of baking powder
Ghee or Butter 2 tbspn
3 tbspn Milk
Chocolate chips
Microwave for 1 and half min

How to make brownie parfaits, brownie truffles, easy brownie desserts,tiramisu brownies|home cooking
Homemade dulce de leche and chewy chocolatey brownies make these parfaits to die for.
INGREDIENTS
Brownies:
•12 oz bittersweet chocolate, melted
•1 cup unsalted butter, melted
•3 cups granulated sugar
•6 eggs
•½ cup cocoa powder
•pinch of salt
•1 ¼ cups all-purpose flour
•¾ cup mini chocolate chips
•1 can condensed milk
•vanilla ice cream
•whipped cream
•butterscotch chips
LET'S GET COOKING...
1.Make the brownies: Place the bittersweet chocolate and butter in a heatproof bowl over a pot of simmering water. Stir until fully melted, then remove from the heat. Gradually whisk in the sugar and add the eggs one at a time, mixing after each addition. Add the cocoa powder and the pinch of salt. Gently fold the flour into the mixture with a rubber spatula and add the mini chocolate chips. Pour the mixture into a square 9×9-inch cake pan that has been butter and lined with parchment paper, ensuring that excess parchment paper is hanging off of both sides. Smooth the surface of the batter and bake at 350F for 60-80 minutes or until fully cooked. Place the pan on a wire rack and allow the brownies to cool completely while still in the pan.
2.Make the dulce de leche caramel: Place the entire can (unopened) of condensed milk in a deep pot and cover completely with water. Bring to a boil over high heat and boil for 3 hours. Be sure to top with water every so often, as it will evaporate. Remove the can from the water and cool until you can handle it without burning. Open the can to reveal homemade dulce de leche!
3.To assemble the parfaits, layer some brownie pieces in the bottom of tall glasses and dollop some vanilla ice cream on top. Spread some caramel on top of the ice cream and repeat until you fill the glasses. Place a dollop of whipped cream on top and decorate with some butterscotch chips. Enjoy!

Sally's back at C&D Soho with a brand new recipe, and a shiny new mixer to test! The guys at Kenwood were kind enough to send us one of their new Titanium Chef Patissier XL mixers, and we were keen to put it through its paces with this recipe: Delicious moist individually baked Brownie Cups, topped with Toasted Swiss Meringue Icing, Raspberries, Ganache and real gold leaf! The perfect treat for Mother's Day. And of course if you don't have a whizz-bang heating weighing mixer don't worry, you can do this at home with your trusty stand mixer and bain marie. The Titanium Chef Patissier XL is available exclusively in-store at Lakeland.

Preheat Oven to 170C (fan assisted)
Brownie Cups:
110g Dark Chocolate (70%)
110g Unsalted Butter
220g Caster Sugar
2 Large Eggs
90g Plain Flour
30g Cocoa Powder
1/2 tsp Baking Powder
1/2 tsp Salt
Swiss Merignue:
3 Egg Whites
250g Caster Sugar
1/2 tsp Vanilla Extract
Pinch of Salt
Raspberry Goo - here is a recipe for Strawberry Goo.....just use Raspberries instead!
Ganache:
50g Double Cream
50f Dark Chocolate (50%)
Raspberries and Gold Leaf to decorate!
