How To make Buffalo & Beans
1/4 c Vegetable oil
1 Green pepper, chopped
1 Red pepper, chopped
2 c Mushrooms, sliced
4 md Onions, sliced
1 1/2 lb Lean beef, ground
1 1/2 lb Buffalo meat, ground
28 oz Kidney beans (2 cans)
28 oz Tomatoes crushed or stewed
2 Cloves garlic, crushed
1/4 c Chili powder
Spices & herbs to taste Saute vegetables in oil. Add meat and cook until no longer pink. Add beans, tomatoes and spices/herbs. (Suggested oregano, cumin, basil, cayenne.) Simmer uncovered until liquid begins to evaporate and chili thickens. Skim excess fat if necessary. Continue to simmer covered for several hours to allow flavours to blend. Serves 8-12. How to Make The Best Buffalo Wings | Quick and Easy Recipe
These baked buffalo wings are crispy, juicy, covered with delicious buffalo sauce and served with amazing blue cheese dipping sauce. This recipe is super easy and perfect for any occasion.

Ingredients:
For the chicken:
2 lb. (900g) Chicken wings
2 tablespoons Vegetable oil
Salt to taste
1-2 teaspoons Garlic powder
Black pepper to taste
3 teaspoons Baking powder
For the sauce:
1/4 cup (70g) Hot sauce
2 tablespoons Honey/brown sugar/white sugar
4 tablespoons (60g) Butter
For the dipping sauce:
1/2 cup (115g) Sour cream
1/4 cup (60g) Mayonnaise
3/4 cup (100g) Blue cheese, crumbled or grated
Black pepper to taste
1 tablespoon Lemon juice
Chives – optional
For serving:
Carrot sticks
Celery sticks
Directions:
1. Make blue cheese dip: in a bowl, mix together all dipping sauce ingredients and well combined. Place in the fridge until ready to serve.
2. Preheat oven to 400F (200C). Line a baking tray with foil, and place a wire rack over the tray. Set aside.
3. Pat dry chicken wings liberally with paper towels, squeezing out as much moisture as you can. Transfer the wings to a large bowl.
4. In a small bowl combine salt, pepper, garlic powder and baking powder. Sprinkle the mixture over the wings, add 2 tablespoons of oil and toss to combine.
5. Arrange the wings on the rack. Bake for 40-50 minutes, filling half way through, until golden brown.
6. While wings are baking, make the sauce: in a small saucepan combine all sauce ingredients. Let the butter melt completely and cook for 2-3 minutes. Turn the heat off and set aside.
7. When wings are ready, add to the sauce and toss until fully coated.
8. Serve with blue cheese dipping sauce, carrot sticks and celery sticks.

Buffalo wings was something I always enjoyed making at my work. But I never ate them knowing just how greasy and fried they really were. Plus wings were expensive...so it was not something a restaurant makes much money on.
There had to be another way. That's when I got the idea to try it with tofu. I even tried the traditional fried way of making them. It wasn't quite right.
Then I tried baking it. NICE! Buffalo wings were starting to look like something I could make at home. Then I want to make it a little bit Southern feeling...I'm a Southerner ya know. :)
So grits and greens had to come next. Mmmm. So good. Grits, Greens and Beans go together perfectly. Especially when you add on more Buffalo sauce or a touch of liquid smoke.
Yes, Buffalo sauce can be Vegan. But not all Buffalo sauces are created equal, READ THE LABELS!
Recipe-
Ingredients--
1 pkg. of Extra Firm Tofu, cut into strips
1 cup (roughly) of Buffalo Sauce
Dash of Liquid Smoke- optional
1 teaspoon of Soy Sauce or Tamari
1 head of Kale, de-stemed and cut into bite sized pieces
1-15oz can of Pinto Beans, drained and rinsed
Water or Vegetable broth for cooking (about1/4-1/2 cup)
1. Make marinade. Combined Buffalo Sauce, Soy Sauce/Tamari and Liquid Smoke together in a mixing bowl. Set aside. Place strips of Tofu (laid flat) in a separate container for the marinade process. Make sure to not crowd or overlap the pieces of Tofu, it needs ample room to absorb the marinade evenly. Pour the marinade over the Tofu and allow to marinade for 1-2 hours.
2. Once marinade time is up, Preheat oven to 375 degrees F. Remove strips of Tofu from marinade and transfer to a cookie sheet with either parchment paper or silicon sheet lining. (This lining makes it so you can use no oil for baking) Lay the strips out flat and distribute around the pan leaving space between each strip. Discard extra marinade.
Bake for 20-30 minutes or until Tofu is firm and has created a Buffalo crust on the outside.
3. In a medium saucepan, place 1/4 cup of water or Vegetable broth. Turn heat on to medium-high. Once at a simmer add in Pinto beans and Kale. Stir everything in pot well and place lid on tightly. Bring up to a hard simmer and cook for 5 minutes or until Kale is cooked through.
4. Serve and Enjoy! Serve Tofu with more Buffalo sauce if desired **Hint, the Buffalo sauce is amazingly good on greens.
