How To make Butter Toffee
2 1/4 c Sugar
1 ts Salt
1/2 c Water
1 1/4 c Butter (2 1/2 sticks)
1 1/2 c Chopped blanched almonds,
-divided 1 c Finely chopped walnuts,
-divided 1 ts Rum extract
4 oz Milk chocolate, broken into
-pieces Butter a 15x10" jelly roll pan; set aside. Combine sugar, salt, water and butter in a heavy 3-quart saucepan. Heat to boiling on medium-high heat. Add 3/4 cup almonds and cook, stirring constantly, to hard crack stage (300-310 degrees). Remove from heat. Stir in remaining 3/4 cup almonds, 1/2 cup walnuts, and rum extract, mixing only enough to combine. Very quickly, pour into prepared pan. Spread evenly. Place chocolate on warm toffee until melted. Easy Peasy Keto Carnivore Toffee! 1 ingredient and no sweetener!
I had been seeing people using brown butter as a carnivore toffee so I decided to try it. Oh My! It is only butter and does taste like toffee - I would suggest using unsalted butter.

Traditional Butter Toffee! The Holidays are Coming!
Greetings! I made the saltine cracker toffee by request a couple weeks ago and said that I would make my traditional toffee, so here it is!
Rick absolutely loves this toffee. He has been after me to make it for a couple of years now. I haven't made it in about 3 years, so I suppose he deserves some now ; ). His family loves this too and I often will include a large box for them to enjoy for the holidays when we ship off their gifts every year. They have been asking for it too!
This is super easy to make and even easier to eat. I prefer this without the chocolate but usually only make it with because everyone else loves it this way. You really can't go wrong. Four ingredients, a little time, a little love and a little effort and you have a super treat that everyone will enjoy.
Now I have to go make another batch (number 3) so that Molly can give some to her friends for Christmas!

2 c. Butter..2 cups sugar..1 T. Karo..1 t. Vanilla..1/2 t. Salt...2 c. Chocolate chips..1/2 cup..pecans....290 on candy thermometer.........Merry Christmas!

Butter Toffee Candy
2 sticks butter
3 Tablespoons water
1 cup sugar
3 Hershey bars
Place butter, water, and sugar in a heavy saucepan. Cook over medium heat until thick and a deep copper color; about the color of an old penny.
Pour onto a parchment paper lined, or well buttered, cookie sheet.
Break up Hershey bars and place on top of hot candy. Allow chocolate to melt. (I turn another cookie sheet upside down to cover the candy.) Spread the melted chocolate over the toffee.
Place in the refrigerator until candy cools and chocolate is hardened. Break into pieces.
