How To make Buzzard's Breath Chili
3 tablespoons Lard,butter
or bacon dripins
2 Onions,lg :
coarsely chopped
8 pounds Beef chuck coarse grind or
8 pounds Beef round :
coarse grind
5 Garlic cloves finely chopped
5 1/3 tablespoons Red chile,hot :
ground
5 1/3 tablespoons Red chile,mild ground
1 tablespoon Cumin
1 teaspoon Oregano,dried :
pref. Mexican
3 cans Tomato sauce(8oz ea)
3 cups Water
2 tablespoons Salt
Parsley(optional) 1 cup Corn flour(masa harina)
1. Melt the lard, butter, or bacon drippings in a large heavy pot over medium heat. Add the onions and cook until they are translucent.~ 2. Combine the beef with the garlic, ground chile, cumin, and oregano. Add this meat-and-spice mixture to the pot with the onions. Break up any lumps with a fork and cook, stirring occasionally about 1/2 hour, until the meat is evenly browned.~ 3. Add the tomato sauce, water, salt, and optional parsley. Bring to a boil, then lower the heat and simmer, uncovered, for 1 hour.~ 4. Stir in the corn flour(masa harina) to achieve the desired consistency.~ 5. Cook 10 minutes longer, stirring. Taste and adjust seasonings.~

1 tablespoon cardamom
1 tablespoon dried juniper berries
1 teaspoon smoked salt
1/2 teaspoon pepper
1/2 teaspoon ginger
1/4 teaspoon allspice or nutmeg
Westfall Stew:
2 pounds quality stew beef, cut into bite-sized pieces
Salt and pepper
1/2 cup diced bacon
2 tablespoons butter, divided
1 pound button mushrooms, sliced
1 1/2 cup peeled pearl onions
1 tablespoon brown sugar
1/4 cup flour
4 cups beef broth
2 cups red wine
1 teaspoon Northern Spices
6 carrots, peeled and cut into bite-sized pieces
1 garlic head, cloves separated and peeled
1 cup pearled barely
2 bay leaves
1 tablespoon minced fresh parsley

We made Rigglefuzz's BBQ Buzzard Wings from WoW
In this week's episode of Chiodini's Kitchen, Johnny takes on the British summer weather (and loses) in his bid to make Rigglefuzz's BBQ Buzzard Wings from World of Warcraft.
Marinade recipe:
1 cup cayenne pepper hot sauce
1/2 cup ketchup
1/4 cup apple cider vinegar
2 tablespoons worcestershire sauce
2 tablespoons unsalted butter
Celery salt
Salt & Pepper
Combine all ingredients in a pan, stir over a low heat for 10 minutes until thickened.
