Tamales are well known as a traditional South American dish made of dough and steamed in the husks of corn. This dish can be served as a main course but in this recipe, we create a tamale pie dessert without the traditional corn husk wrap!

Ingredients:
8 ½ oz (1 box) cornbread mix
1 large egg
½ cup sour cream
½ cup canned creamed corn
1 tbsp olive oil
5½ oz yellow onions, chopped
1 tsp ground cumin
1 tsp chili powder
2 cloves garlic, minced
1 lb ground beef
½ cup beer of your choice
⅓ cup red enchilada sauce (recipe below)
1 cup shredded cheddar cheese
1 cup shredded Monterey jack cheese
salt & ground black pepper to taste
cooking spray
Red Enchilada Sauce:
2 tbsp olive oil
¼ cup finely chopped red bell peppers
¼ cup finely chopped red onions
1 tbsp finely chopped garlic
2 tsp chili powder
1 tsp ground cumin
¼ tsp cayenne pepper
1 beef, chicken, or tomato bouillon cube
1 tbsp all-purpose flour
2 cups chicken or beef stock
¼ cup beer of your choice
15 oz (1 can) tomato sauce
Salt & ground black pepper to taste

For the enchilada sauce:
0:11 Heat the oil in a medium saucepan over medium heat. Add the peppers, onions, and garlic and saute briefly.
0:34 Add the chili powder, cumin, cayenne, and bouillon cube. Roast briefly.
0:50 Add the flour, stir to combine and cook it for another minute.
0:57 Deglaze with beer and reduce briefly.
1:05 Add the beef stock and tomato sauce, stir then bring to a boil. Reduce to a simmer, and continue simmering for about 5 to 10 minutes until the sauce is nice and thick and reduced by about a third.
1:31 Adjust the taste accordingly with salt and pepper, then allow the sauce to cool slightly.
1:43 Transfer to a blender then puree the sauce until smooth. Set aside. You can prepare the enchilada sauce a day ahead and can either be stored in the refrigerator for a week or frozen.
For the cornbread:
1:53 Preheat the oven to 400°F and grease a baking casserole.
2:01 In a large bowl, combine cornbread mix, egg, sour cream, and creamed corn. Whisk until a batter is formed.
2:24 Transfer to the baking casserole and bake for roughly 20 minutes until golden. Set aside to cool briefly.
For the beef filling:
2:45 In a large skillet over medium heat, heat oil. Add onion, garlic, cumin, and chili powder. Saute until vegetables turn translucent.
3:10 Add ground beef and saute, breaking up meat while sauteing for about 6 minutes.
3:22 Deglaze with beer & reduce briefly.
3:30 Season with salt & pepper to taste. Adjust accordingly & set aside. Drain any excess fat if necessary.
3:43 Poke the entire surface of cornbread with a fork and pour over the enchilada sauce. Add beef and top with cheeses.
4:32 Bake for about 5 minutes until cheese is melted, then broil for another 5 minutes until the cheese turns golden. Serve immediately!

How to make the best Cornbread Stuff| AKA Enchilada Bake| AKA Tamale Pie|
Today we are going to make something I affectionately call cornbread stuff. This is a dish that we grew up eating because it was inexpensive to make, and it stretched a long way. You may know it as enchilada bake, or tamali pie. But to me and my family it's called cornbread stuff all I hope you enjoy.

Mini Tamale Pies | Delish

INGREDIENTS
2 boxes Jiffy corn muffin mix
1 c. frozen corn
1 c. sour cream
4 tbsp. melted butter
2 large eggs
nonstick cooking spray
1/2 onion, chopped
kosher salt
Freshly ground black pepper
1/2 tsp. cumin
1/2 tsp. chili powder
2 cloves garlic, minced
1/2 lb. ground beef
1/2 c. shredded Cheddar
1/2 c. Shredded Monterey Jack
1/3 c. red enchilada sauce
Fresh cilantro, for serving
DIRECTIONS
1. Preheat oven to 400°.
2. Prepare cornbread base: In a medium bowl, combine corn muffin mix, corn, sour cream, butter, and eggs and whisk until evenly combined. Spray one regular sized muffin tin with cooking spray. Using a medium ice cream scoop, scoop batter into muffin tin and bake for 15 minutes, or until golden on top.
3. While the cornbread is still warm, make the cups. Spray the bottom of a small shot glass with cooking spray and press the shot glass down into the center of each cornbread to create cups. Let cool in pan.
4. Meanwhile, make the taco meat: Sauté onions over medium heat. Season with salt, pepper and spices and cook until soft. Add garlic and cook until fragrant, about 30 seconds. Add the ground beef and stir to break up meat. Season to taste and sauté until cooked through. Remove skillet from stovetop and drain excess fat.
5. Fill the cornbread cups with the taco meat and top with cheeses. Spoon enchilada sauce on top of the meat and broil until cheese begins to brown, about 5 minutes.
6. Top with cilantro, if desired.
