How To make Carroll Shelby's Chili
1/2 lb Suet or
1/2 c Oil,cooking
1 lb Beef round,coarse grind
1 lb Beef chuck,coarse grind
1 cn Tomato sauce(8oz ea)
1 cn Beer(12oz ea)
1/4 c Red chile,hot,ground
2 Garlic cloves,finely chopped
1 Onion,small,finely chopped
1 1/4 t Oregano,dried,pref. Mexican
1/2 t Paprika
1 1/2 t Cumin,ground
1 1/4 t Salt
Cayenne pepper 3/4 lb Monterey Jack cheese,grated
1. Melt the suet or heat the oil in a heavy 3-quart (or larger) pot over
medium-high heat. Remove the unrendered suet and add the meat to the pot. Break up any lumps with a fork and cook, stirring occasionally, until the meat is evenly browned.~ 2. Add the tomato sauce, beer, ground chile, garlic, onion, oregano, paprika, 1 teaspoon of the cumin, and the salt. Stir to blend. Bring to a boil, then lower the heat and simmer, uncovered, for 1 hour. Stir occasionally.~ 3. Taste and adjust seasonings, ading the cayenne pepper. Simmer, uncovered, 1 hour longer.~ 4. Stir in the cheese and the remaining 1/2 teaspoon of the cumin. Simmer 1/2 hour longer, stirring often to keep the cheese from burning.~

Perfect Crockpot Chili | Easy Chili Recipe | Winter meal staple
This is my favorite way to make chili. It's mild (because I don't do spicy) but you can easily spice it up if you like it hot! ????
Here's what you need:
1/2 bag seasoning blend (onion, red and green peppers and parsley)
1 lb ground beef, cooked (I like to use 1/2 lean ground beef and 1/2 ground chuck)
1 28 oz can of crushed tomatoes
1 28 oz can of petite diced tomatoes
2 cans of chili beans
1 box Carroll Shelby's Texas Chili kit
Here's how I make it:
On the stovetop, sautée the seasoning blend and brown meat.
In a crock pot dump all of the ingredients and stir. That's it!
Cook on low for 6 hours or high for 3 hours.
Serve it as is, or top it with cheese, onions, sour cream, saltines or whatever your heart desires.

2005 & 2009 National Champion Red Chili Recipe - How to make a Red Chili
This video shows you the 2-time National Champion Red Chili recipe. This recipe was created by Margaret Nadeau and won the CASI Terilingua International Chili championship in 2005 & 2009.
She calls it Sahara Chili
To make:
STEP 1:
2 lbs. Course ground beef (chili grand)
1 TBS Cooking oil
1 TBS Granulated onion
Add ingredients together and lightly brown meat
STEP 2
Add:
1 can (8oz) Tomato Sauce
1can Beef Broth - I used 15oz
Cook for 30 minutes
STEP 3
Add:
1 TBS Light Chili Powder
2 TBS Dark Chili Powder
1 tsp Garlic powder
1/2 tsp Salt
1/2 TBS Cumin
1/2 tsp Cayenne
1/2 tsp Black Pepper
1 tsp Chicken Granules or 1 cube
Cook for 1 hour
Step 4:
Add:
1 TBS Light Chili Powder
1 TBS Dark Chili Powder
1 tsp Paprika
1/2 TBS Cumin
Add water if needed - I didn't - Perhaps using 8 oz of beef instead and using water at the end here will cut not on the saltiness.
Leave covered and simmer for 30 minutes.
