5 Eggs; separated
275 g Sugar
1 Lemon; juice
2 Lemons; zest, grated
250 g Almonds; ground
300 g Carrots; finely grated
75 g Cornflour
1 pn Cinnamon; ground
1 pn Cloves; ground
10 g Baking powder
1/2 dl Kirsch
1 pn Salt
- for glazing 50 g Apricot jelly
Fondant icing Marzipan carrots (Units: 100 g = 3 1/2 oz; 1 dl = 3 1/2 fl oz = 2/5 cup; 180 oC = 350 oF; 200 oC = 400 oF; 230 oC = 450 oF; 250 oC = 475 oF; 2.5 cm = 1 inch)
The Story: The cultivation of vegetables in Aargau is one of the main reasons for the existence of a thriving canning/bottling industry. In this area, the carrot is the Queen of all vegetables and it has attributes which allow it to be used everywhere, even in desserts. This carrot cake is now a Swiss classic, its reputation having been extended long ago far beyond the borders of the canton. Some maintain that the cake is better two days after baking as the carrots keep it moist. The Recipe: Beat together the egg yolks, sugar, lemon juice and lemon zest, until light. Add the finely grated carrots and the almonds. Mix in the cornflour, cinnamon, ground cloves and baking powder. Then add the kirsch. Mix or beat until smooth. Beat the egg whites until stiff and carefully fold in. Butter a tin (24 cm diameter, 5 cm high), dust with flour. Turn the mixture into the tin. Bake in the oven for 50 ... 60 minutes at 180 oC. When cooked, brush the cake with a hot apricot glaze and thin fondant icing. Decorate with small marzipan carrots. 330g / 3 cups Grated carrots
250g / 2 ½ cup Almond flour

½ pce Lemon juice

Marzipan carrots
Preheat the oven to 180C/350F.
Paper a 24cm/9 inches springform cake pan.
In a large bowl, whisk together the egg yolks and sugar until you get a pale, yellow paste.
Add the carrots, baking powder, flour and almond flour.
Don’t overmix.
In another large bowl, whisk the egg whites with a pinch of salt into stiff peaks.
Gently fold in the beaten egg whites and spread into the pan.
Bake for 55-60 minutes.
Let it cool on a cooling rack.
Vigorously mix the powdered sugar and lemon juice and spread over the cold cake.

How to make the most popular Swiss birthday cake: Carrot Cake // Rüeblichueche us em Aargau
Every year on my birthday, I was given a Rüeblitorte (carrot cake), usually by classmates. The cake or Turte was so popular among the baking parents that it often popped up several times at the buffet… That's why carrot cake left a lasting imprint on my time as a schoolgirl.
Ingredients:
* 5 eggs, separated into yolks and whites
* 80 g butter
* 170 g sugar
* zest of 1/2 lemon
* Zest of 1/2 orange
* 350 g carrots, very finely grated
* 150 g grinded almonds (or almond flour)
* 150 g grinded walnuts (or walnut flour)
* 50 g all-purpose flour
* 1 sachet baking powder ( ca. 15 g)
* 1 good pinch of salt
* 2 good pinches of cinnamon
* 1 pinch clove powder
* a little nutmeg powder
* 3 tbsp. Kirsch (Cherry brandy)
Icing:
* 4 tbsp. apricot jam
* 250 g icing sugar
* 3 tbsp. lemon juice
Separate the eggs. Next, mix the egg yolks, butter, citrus zest and sugar until evenly poured, then add the grated carrots, ground nuts, flour, baking powder, salt and spices and mix to a dough. Finally, season to taste with cherry brandy (Kirsch).
Whisk the egg whites in a high bowl until they become stiff - scoop some off with a tablespoon and keep for later.
Mix the remaining egg whites evenly with the cake batter.
Now preheat the oven to 180 °C top/bottom heat.
Cover a medium-sized springform with baking parchment and fill evenly with the batter.
When the oven is hot enough, bake the cake in the lower third at 180 °C for 45 - 50 minutes. Check in the meantime whether it needs a cover (aluminium foil).When the time is up, use a wooden stick to poke the cake to check that it is thoroughly baked (but not too dry!).
Remove it from the oven and spread the apricot jam as thickly and evenly as possible over the top of it while it' s still warm.
As it continues to cool, make a glaze by whisking together the remaining egg whites, lemon juice and icing sugar. Then spread the icing over the cooled top, smoothing it out from the centre. Decorate with the marzipan ruffles.
By the way: The Aargauer Rüeblichueche tastes even better the next day, as the flavours can unfold better overnight.

Whenever I travel to a new destination, I love visiting local Starbucks to see what unique menus they offer.
During my trip to Switzerland, I discovered bear-shaped cookies dressed in green aprons, along with the cute carrot muffins.
Usually, I only come across carrot cake slices, so I was happy to try something different. One day I hope they will have it in Dubai as well.
