PIE CRUST:
2 c All-purpose flour 1/2 ts Salt 1 c Vegetable shortening Ice water FILLING AND ASSEMBLY: Heat oven to 450 degrees. Mix all ingredients together at medium speed of electric mixer, blending thoroughly. Pour into pie shell and bake at 450 degrees for 5 minutes. Reduce heat to 325 degrees and continue cooking for 45 minutes, or until pie is set. Let cool about 10 minutes before serving. PIECRUST: Mix flour and salt together in a bowl. Cut vegetable shortening into flour until mixture resembles course meal. Sprinkle with ice water, 1 tablespoon at a time, mixing quickly with a fork after each spoonful. Add only enough water so dough holds together and can be formed into a ball. Divide dough into 2 equal portions and form each into a smooth ball, handling as little as possible. Roll one portion out onto lightly floured surface. Place rolled dough in a 9-inch pie plate; trim and flute edges.

Easy carrot pie recipe from a canned pumpkin recipe
This is a pretty easy pie recipe made with carrots. I was trying to come up with an Easter dessert recipe so I came up with carrot pie as a springtime alternative to pumpkin pie by making a simple modification to a canned pumpkin pie recipe (just change the pumpkin with shredded carrot). I have always been a fan of carrot cake, so I was interested to see how carrot pie would turn out. I still like carrot cake better, but this was pretty good.
Start off by making the crust. Or you could buy one ready made from the store. Pecans would be a good addition. Grate about 400 grams of carrots. That is about how much a small can of pumpkin is. Toast about half a cup of coconut in a pan. Or don't. Or leave out completely. Cook the grated carrots in the pan. I only cooked them for three minutes but I would try cooking for longer. Add spices. Cinnamon and ginger are typically what you find in carrot cake. Start preheating the oven to 450 degrees F. Add 3/4 cups of sugar after turning the burner off. Add eggs once the pan and the carrots cool off enough to safely do so. Add a can of evaporated milk. Add some of the coconut; reserve some if you want to put it on top. Pour into the shell and add coconut on top, if desired. Bake at 450 F (230 C) for 20 minutes, then reduce the heat to 350 F (180 C) for 40 minutes. Then you have something that looks like a cheap knockoff of a pumpkin pie.

This is an example of how I do most of my cooking. I seldom follow recipes but I watch lots of recipe videos for inspiration. The beauty of cooking is a lot of things can be interchanged and you can use as many or as few elements from someone else's recipe and still have something that tastes great. The nice thing about cooking at home is you are usually cooking for only a few people so there are less people to please.

1930 Carrot Pie Recipe - Old Cookbook Show - Glen And Friends Cooking This carrot pie recipe is one of those sweet pie recipes that is almost forgotten about. Overtaken by sweet potato and pumpkin pies. But carrot pie has a great flavour and texture. This carrot pie recipe is a winner.
Ingredients: 1 ½ cups cooked mashed carrots ⅔ cup brown sugar 1 tsp cinnamon ½ tsp ginger ½ tsp salt 2 eggs 1 ½ cups sweet milk ½ cup sweet cream
Method: Mix ingredients in order given and bake in 1 crust. Bake in a quick oven at first to set the rim, then decrease the heat, as egg and milk mixture in combination needs to be cooked at low temperature.
2020 Method: Preheat oven to 425ºF Mix ingredients and pour into a 9 shallow pie shell. Bake at 425ºF for 10 minutes, then lower temp to 325ºF. Bake until middle just barely jiggles - about 1 hour more.
