1 pk Frozen Chopped Spinach, - cooked pasta
- thawed and squeezed dry 1 lb Sweet Italian Sausage, 1 cn Condensed Cream of Mushroom - cooked, drained and
- Soup - chopped 1 Garlic Clove, minced 1 lg Onion, coarsely chopped
1/2 ts Each: 1 Egg
- Dried Tarragon 1 pk (15-16 oz) Riccota Cheese - Marjoram 1 Tomato, seeded and chopped Salt and Pepper, to taste Parsley, chopped 4 c Cooked Noodles, or other
Combine spinach, cream of mushroom soup, garlic and seasonings in a small bowl; spread evenly over noodles or other pasta in buttered 3-quart flat casserole. Distribute chopped sausage over the spinach mixture and sprinkle with chopped onion on top of sausage. Blend egg into ricotta and spread over all. Bake in a preheated 375-F oven 25 to 30 minutes or until golden, then allow to cool slightly. Top with garnish of tomato and parsley. CHICKEN FLORENTINE CASSEROLE | easy prep ahead weeknight meal using leftover rotisserie chicken |
Looking for ways to use rotisserie chicken or cooked chicken of any kind? This Chicken Florentine Casserole is a new favorite of ours! It's super easy to make and can be prepped ahead of time making it a perfect weeknight dinner. Plus it's creamy and comforting, without being loaded down with tons of butter, cheese, and heavy cream, just enough to make it ultra satisfying. Serve it with a side salad, and dinner is done!

Ingredients:
2 cups chicken, shredded or chopped
8 oz rigatoni, cooked
2 Tbsp butter
1/2 yellow onion, chopped
5 oz cheese (Swiss & Monterey jack)
2 tsp minced garlic
2 Tbsp flour
1 cup milk
1 1/2 cups water
1 1/2 tsp chicken bouillon
1/2 cup sour cream
salt & pepper
6 oz baby spinach
Sautee onion in butter to soften. Add garlic, cook 1 minute, then add flour. cooking 1 minute and stirring to coat. Gradually add milk and water, stirring to avoid clumps. Add chicken bouillon, cheese, and sour cream, stirring to melt cheese and combine. Combine all ingredients in casserole dish, and bake covered at 400⁰ for 40 minutes.
Topping:
3 oz fresh bread crumbs
2 Tbsp melted butter
1/4 cup parmesean
1 tsp dried parsley
Add topping and bake uncovered 10 minutes longer or until breadcrumbs are golden brown.

4 chicken breasts
1 large egg
3 tbsp plain all-purpose flour (replace with gluten free flour blend if needed)
1/4 tsp salt
1/2 tsp freshly ground black pepper
1/2 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp dried paprika
1/4 tsp garlic salt
3 tbsp olive oil
1 brown onion peeled and sliced
2 cloves garlic peeled and minced
1/2 tsp dried oregano
1 tsp paprika
1 cup (160g) sun dried tomatoes I like the bright red one from the deli counter
1 red bell pepper de-seeded and sliced
1 tbsp tomato puree (paste)
1/3 cup (90ml) white wine
1 cup (240ml) chicken stock (use bouillon for gluten free)
pinch of salt and pepper
1/3 cup (90ml) double (heavy) cream
1/2 packed cup (50g) parmesan cheese grated
3 packed cups (90g) fresh baby spinach
1 tbsp chopped parsley
