[Quick and easy] Mushroom head CHOCOLATE BANANA MUFFINS | Double chocolate, soft and moist muffins
Children’s Day is around the corner and here’s a quick and easy recipe for mushroom head chocolate banana muffins that are suitable for kids. It’s a double chocolate, soft and moist muffin. What’s more, it’s not so sweet. Hope you enjoy this easy banana chocolate muffins recipe that can be made within an hour!
Things to note:
1. This recipe makes 3 mushroom head chocolate banana muffins and some leftover enough for a regular muffin. Feel free to double or triple the amounts to get 6 or 9 mushroom head muffins.
2.Eggs and milk must be at room temperature to ensure the batter mixes together easily and evenly.
3. Do not over-mix the batter, stop mixing when you don’t see any dry ingredients. The muffins will be too dry and dense if you over-mix.
4. Line the muffins alternatively so that the mushroom head muffins don’t stick together.
5. For mushroom head muffins, fill the muffin liners to 100 to 110% full and bake at 170C/ 340F for 25 minutes. For regular muffins, fill the muffin liners to 70 to 80% full and bake at 170C/ 340F for 15 minutes.
6. Store the muffins in an airtight container lined with paper towels. The paper towels help to absorb moisture from the muffins and prevent them from becoming soggy. You can store them at room temperature for 1 to 2 days. Change the paper towels the next day if they are too wet. You can also place the muffins in the fridge, but this might alter the texture.

100g cake flour
12g cocoa powder
4g baking powder
1g baking soda
1 banana (you can add ½ or 1 more if you like a stronger banana flavour)
1 egg
30g milk
40g corn oil
35g sugar
30g chocolate chips (in the batter)
10g to 15g chocolate chips (place on top for aesthetics)

Copycat Starbucks Egg Bites are crazy easy to make at home for literally a fraction of the price. Plus, you get a whole dozen of them as opposed to paying an arm and a leg for just two!

These are going to give you all the same cheesy egg goodness and plenty of protein, and we even throw in a little more bacon than the originals have. Making 12 at once means that you’ve got breakfast covered for days and you will be shocked by how much time you save when you don’t have to wait in that drive-through line every morning.
Whipping up a batch of these Egg Bites over the weekend will change your entire week. Whether you are making them for your family, roommates, or just meal-prepping for yourself, having this recipe up your sleeve is a game-changer.
How to make Egg Bites:
You’ll start off by arranging your oven racks so that you have one in the center and one in the lower third of the oven. Fill an oven-safe dish halfway with water and place it on the lower rack. Now just preheat your oven to 300° to create a nice and steamy space for your eggs to cook.
Next, you’ll prep a silicone muffin pan with cooking spray or alternatively, you could use a regular muffin pan with paper liners and spritz those with cooking spray as well. No reason to make Egg Bites if you can’t get them out of the pan!
Heat up a large pan over medium-high heat and add your chopped bacon right in. You’ll need to cook it for about 6-8 minutes (or until it’s as crispy as you like it!), stirring often. Once it’s done, simply use a slotted spoon to transfer it from the pan to a plate lined with paper towels. Let that drain while you prep the rest of the ingredients.
Time to pull out the blender! You’ll add the eggs, salt, and all three cheeses to the pitcher of your blender and mix on medium-high. You’ll only need to run it for about 20 seconds.
Now, just divide the bacon evenly among the wells of your muffin pan and fill them about ¾ of the way with the egg mixture.
Pop them in the oven for 28-32 minutes, allow them to cool slightly, and enjoy your at-home Egg Bites!
