How To make Cheese Potato Casserole
4 c Potatoes; cubed, cooked
8 oz Yogurt, plain
1 c Cottage cheese
1/2 ts Salt
1/4 ts Pepper
1/4 ts Dillweed
1 c Cheddar cheese; shredded
Combine all ingredients except Cheddar cheese; spoon into a 9inch baking pan. Top with cheddar cheese. Bake at 350 degrees for 25 to 30 minutes. SOURCE: Southern Living Magazine, sometime in 1977. Typed for you by Nancy Coleman.

This Cheesy Potato Casserole is made with fresh potatoes and a creamy, tangy homemade cheese sauce -- no hashbrowns or cream soups here!

INGREDIENTS:
1 ½ lb Little potatoes (cut into 1cm cubes)
¼ cup unsalted butter
½ medium onion finely chopped
1 teaspoon minced garlic
1 teaspoon Italian seasoning
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons all purpose flour
1 ½ cups milk (any kind)
½ cup sour cream (any kind)
3 cups shredded cheddar cheese (divided)
INSTRUCTIONS:
Bring a large pot of salted water to a boil. Add potatoes and cook 5-6 minutes, until almost tender.
Drain potatoes and place in a lightly greased 9x9 baking dish. Preheat the oven to 375 degrees F.
In a medium skillet, melt butter over medium heat and cook onion until softened and beginning to brown.
Stir in garlic, Italian seasoning, salt and pepper and cook for 1 minute.
Add flour and whisk until combined.
Add milk and cook over medium heat, stirring frequently, until thickened -- about 5 minutes.
Stir in sour cream and 2 cups of cheddar cheese.
Pour sauce over potatoes in baking dish, stirring to combine. Sprinkle with remaining 1 cup cheese and bake until bubbly and golden, about 20 minutes.
Remove from the oven and allow to sit for 5-10 minutes before serving.

This Cheesy Potato Casserole, also known as Funeral Potatoes, is perfect to feed a crowd at your summer BBQ or a potluck any time of year!
Cheesy Potato Casserole (adapted from the Kellogg’s recipe)
2-10 oz. cans cream of chicken soup
1 c. sour cream
1 small onion, finely diced
1-32 oz. bag shredded potatoes or hash brown potato cubes
16 oz. shredded sharp cheddar cheese
2 cups cornflake cereal
½ stick unsalted butter, melted
Preheat oven to 350 degrees. In a very large mixing bowl, stir together the cream of chicken soup and the sour cream. Add the onions, potatoes, and cheddar cheese. Stir to combine thoroughly. Spread the potato mixture into a greased 9x13 in. glass baking dish. Sprinkle the cornflake cereal all over the surface of the casserole. Drizzle the melted butter over the cornflakes. Bake at 350 degrees for 1 hour. Tent with foil during baking process if cereal starts to brown too much. ENJOY!

2 Tbsp butter
2 cups of milk
1 tbsp chicken bouillon or 1 tsp salt (adjust to taste)
1 tsp black pepper
1 1/2 cups of cheese
2 tbsp oil
Tip❗️
Use white Vermont cheddar in the béchamel sauce if possible
If you don’t microwave potatoes your bake time will be around 1 hr 10 mins, since the potatoes are cut thick : )
