Directions:
Heat a flat grill or skillet to 350 degrees F (175 degrees C). Layer a tortilla with the corn and cheese. Place the second tortilla on top. Heat until the cheese is melted and both tortillas are slightly brown. Top with the tomato slice and serve.

Ingredients:
180g Powdered Cheese (equates to 2 cups less 1 tbsp)
4g/ 1 tsp Baking Powder
3g/ 1 tsp Gelatin Powder
6g/ 2 tsp Xanthan Gum
2 Egg Whites (1/4 cup or 60g)
Pinch Cream of Tartar
Vegan Substitutions:
Use Almond Flour to replace the Cheese
205g/2 cups Almond Flour
Use Agar Agar to replace the Gelatin
You will need a little fat so the dough is not dry, about 1 tablespoon.

Chicken and Spinach Cheesy Tortillas
*Ingredients*
baby spinach, cheddar, chicken, chicken breast, chili flakes, cream cheese, pepper, salt, tortilla, vegetable oil, meat
*Recipe*
Preheat the oven to 370°F/185°C.
Dice the chicken breast and season it with salt.
Heat a skillet and throw in the chicken. Season it with chili flakes and fry it until golden.
Separately, use a large bowl and add the cream cheese, baby spinach, cooked chicken, and 3/4 of shredded Cheddar.
Season it with salt and pepper. Mix everything.
Use this mixture to equally fill the 4 tortillas. Place them in a backing tray and top with the remaining Cheddar.
Bake the tortillas for 25 minutes.
Serve them with sprinkled spring onion on top!
