Chicken Burrito Recipe

Ingredients:
6 Flour tortillas, large
2 Chicken breast/thighs, skinless and boneless
1 teaspoon Salt
1 teaspoon Paprika
1 teaspoon Black pepper
1 teaspoon Oregano
1 teaspoon Cumin
3 Garlic cloves, crushed
1 Large onion, chopped
1 Bell pepper, chopped
1 can (15.5oz/439g) Black beans
2 Tomatoes
1 Avocado
Coriander
Leftover rice
Cheese of your choice
Oil for cooking the chicken
Directions:
1. Prepare the chicken: In a small bowl mix salt, cayenne pepper, paprika, cumin and oregano. Set aside. Place chicken breast in a large bowl, sprinkle seasoning mixture, drizzle with 1 tablespoon of oil and toss to coat.
2. Heat 1-2 tablespoons of oil in a large pan over medium heat. Add chicken breast/thighs and cook for 3-4 minutes on each side, until fully cooked.
3. In the same pan, sauté onion for 5 minutes, add garlic and chopped bell pepper and sauté for 2-3 minutes more. Add beans, season with salt and pepper. Cook for 4-5 minutes. Remove from heat.
4. Assembly: place the tortilla on your working surface, first layer the rice, then place the bean mixture, then place some chicken chunks, then chopped avocado, chopped tomatoes, then coriander leaves and eventually sprinkle some shredded cheese. Fold the sides of tortilla and roll.
5. Now you can serve it like this or:
a. Toast the burritos on a dry pan.
b. Wrap the burrito tightly with foil and bake in preheated 350F (180C) oven for about 10 minutes.
6. Serve with homemade guacamole.

MEXICAN CHICKEN BURRITO
Preparation time : 15 minutes
Cooking time : 25-30 minutes
Servings : 2
Ingredients
For Chicken gravy
2 tbsp Oil (तेल)
1 tsp Cumin Seeds (जीरा)
2 fresh Green Chillies - chopped (हरी मिर्च)
1 medium Onion - chopped (प्याज़)
1 tsp Coriander Powder (धनिया पाउडर)
½ tsp Turmeric Powder (हल्दी पाउडर)
1 tsp Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)
1 cup Curd (दही)
Marinated Chicken (मैरिनेटेड चिकन)
Salt to taste (नमक स्वादानुसार)
Water (पानी)
¼ cup Kidney Beans - boiled (राजमा)
2 tbsp Coriander Leaves (धनिया के पत्ते)
For Marinating Chicken
500 gm Chicken Breast - small cubes (चिकन)
Salt to taste (नमक स्वादानुसार)
1 tsp Ginger-Garlic Paste (अदरक लहसुन का पेस्ट)
For Roti
½ cup Wheat & Refined Flour Dough (गेहूं और मैदे का गुंदा आटा)
For Salad
1 medium Onion - chopped (प्याज़)
1 medium Tomato - chopped (टमाटर)
2-3 fresh Green Chillies - chopped (हरी मिर्च)
Salt to taste (नमक स्वादानुसार)
½ medium Lemon Juice (नींबू का रस)
2 tbsp Coriander Leaves - chopped (धनिया पत्ता)
For Rice
1 cup cooked Rice (पका हुआ चावल)
2-3 tbsp Butter - melted (मक्खन)
½ tsp roasted Cumin Powder (भुना जीरा पाउडर)
Other Ingredients
1 tbsp Mayonnaise (optional) (मेयोनीज)
2-3 tbsp Grated Cheese (चीज़)
Process
For Marinating Chicken
In a bowl add chicken, salt, ginger-garlic paste, mix everything properly and keep aside for 15-20 minutes.
For Chicken gravy
In a kadai heat oil and add cumin seeds let them crackle then add green chillies, onion and saute until light golden.
Now add coriander powder, turmeric powder, degi red chilli powder and saute until fragrant.
Add the curd mix properly and saute for 2-3 minutes on medium heat.
Now add the marinated chicken, mix it once properly and then add salt, water, kidney beans.
Then cover and cook for 15-20 minutes or until chicken cooked properly.
Remove the lid and finish it with coriander leaves and switch off the flames. Keep aside for further use.
For Roti
Take a small portion of the dough and roll it into a thin roti.
Now half cook the roti on a flat pan and keep aside for further use.
For Salad
In a bowl add chopped, onion, tomato, green chillies, salt, coriander leaves, lemon juice and mix everything properly.
Keep aside for further use.
For Rice
In a bowl add cooked rice, roasted cumin powder, melted butter and mix everything properly, keep aside for further use.
For Assembling Chicken Burrito Roll
Firstly roast the half cooked roti properly from both sides.
Then place it on a plate and spread some mayonnaise on the lower part of the roti (which is near you).
Now add some rice on the same spot then some chicken with its gravy, some salad, grated cheese.
To roll it properly fold the both sides in and then roll it tightly from the side near to you to the side completely across.
It's ready to be served with some mayonnaise or chutney and nachos.

It’s another beautiful day and today we are going to make chipotle out of business with the best chicken burritos now I always say the best food is homemade and this burritos are no exception. My favorite fast food restaurant back in the day used to be CHIPOTLE but for the past years this restaurant or at least here in Arizona has not been the same, my favorite side is their cilantro lime rice well now it’s always so bland and their meat is always so dry and just so flavorless definitely not my favorite place, but thankfully we can do it all at home and so much better ???? ☺️???? Ingredients:
For the chicken
2 lbs chicken breast or thigh cut into bite size pieces
2 minced chipotle peppers with 1 tbsp adobo sauce
2 tbsp white distilled vinagre
2 oil
2 minced garlic cloves
1/4 minced white onion
2 tsp garlic salt
1 tsp ground cumin
1 tsp oregano
1 tsp chipotle powder
1/2 tsp black pepper
1/2 tsp salt
For cilantro lime rice
2 cups white rice I’m using basmati
4 cups water
2 tsp garlic salt
1 tbsp butter
1 tbsp fresh lime juice or juice of 1 lime
Handful of chopped cilantro
Flour tortillas

Sour cream
Pico de gallo
Smashed avocado
