Chicken Casserole inspired by Mary Berry
(Serves 4)
Mama Bear’s sister asked how we did our chicken casserole. So we said that as autumn is drawing in, the casserole pot is coming out. It’s a very yummy & easy one to make. Inspired by Mary Berry’s Complete Cookbook @maryberrys_foods we slightly changed the recipe, suitable for our tastebuds ????

2 tbsp sunflower oil
4 chicken portions (legs or thighs) washed & dried with kitchen paper
125g smoked back bacon, cut into strips
250g carrots, 1cm thickly sliced
2 celery stalk sticks, thinly sliced
1 very large onion, thinly sliced
1 tbsp butter or margarine
30g plain flour
1 ltr chicken stock (low-salt)
1 bouquet garni
Salt & black pepper to taste
4 medium potatoes, peeled & cut into large chunks
Chopped parsley for garnish
* Pre-heat oven at gas mark 3 or equivalent. Heat oil in large flameproof casserole. Add chicken, skin-side down, cook for 10 mins until browned all over. Lift out & set aside. Add bacon, carrots, celery & onion, & cook over high heat, stirring until golden. Lift out with slotted spoon & set aside.
* If no fat left in casserole, add 1 tbsp butter/ margarine. Add flour, cook & stir constantly for 3-5 mins until lightly browned. Gradually pour in chicken stock, stirring until smooth. Add bouquet garni, season with salt & pepper to taste.
* Return the chicken, add potatoes then add the bacon & onion mix to casserole, bring to boil. Cover pot, place in oven & cook for 1 hour & 15 mins until chicken is tender & potatoes cooked. Garnish with parsley & serve hot. Enjoy!
