Ingredients
2 cups cooked shredded chicken
4 cups tortilla chips
2 cups shredded cheddar cheese, Colby Jack, Monterey Jack or your favorite cheese
2 cans (14 ounces each) fire-roasted tomatoes or regular diced tomatoes, with liquid
1 jalapeno (remove seeds and ribs for less heat)
1/2 tsp salt and pepper
1 cup chicken broth
3 cloves garlic
1 tablespoon olive oil
1 small red onion, chopped
Directions
Preheat oven 350-degree F
Put the tomatoes, jalapeno, garlic and chicken broth into a blender. Season with salt and pepper. Blend until smooth.
Heat the olive oil in a skillet. Add the red onion and cook until soft, about 2 minutes.
Pour the tomato mixture into the skillet with the onions. Gently simmer until thickened, about 10 minutes.
Add the chicken and stir to combine. Turn off the heat
Put the tortilla chips onto the bottom of an ovenproof skillet or casserole dish.
Spoon the tomato and chicken mixture over the chips
Top with the shredded cheese
Bake for about 10 minutes, Top with a fried egg if desired !!

INGREDIENTS:
-1 1/2 pounds tomatillos , husked, washed and cut into quarters
●1 jalapeno, split in half through the stem
●2 cloves garlic , peeled
●1 white onion , rough chopped
●Extra virgin olive oil
●1 bunch fresh cilantro , washed
●Juice of 1 lime
●12 6-inch whole wheat tortillas , cut into 1/2-inch strips (they can be a day or two old, but fresh is fine too)
●3 cups roasted chicken , shredded
●4 scallions , finely chopped
●1/2 cup fresh cilantro, chopped
●2 tablespoons ground cumin
●1 teaspoon chile powder, optional
●Kosher salt and freshly ground black pepper
●1 cup crumbled queso fresco
●1 cup grated packaged mozzarella cheese

2 to 3 cups of Mexican rice
3 to 4 cups of Mexican cheese blend
2 cups of pinto beans
Desire amount of Mexican sour cream
Topping iceberg lettuce, Mexican cheese blend, pico de Gallo, hot sauce

Serves 5
Ingredients:
20 Corn Tortillas (stale tortillas work perfect in this recipe!)
3 cups cooked and shredded Chicken
2 cups shredded Cheese
1 Onion cut into slices
Cooking Spray or about 2 tablespoons Extra Virgin Olive Oil
Mexican Cream or sour cream to serve (optional)
Ingredients for the Green Salsa:
1½ Lbs. Tomatillos or Green Tomatoes
7-10 Jalapeño Peppers (use less peppers if you don't like it too spicy)
a Small chunk of Onion (about 2-3 tablespoons)
1 Garlic clove
¼ cup Fresh Cilantro
Salt to taste
Ground Black Pepper to taste

Ingredients for green chile enchiladas
Chicken (I used 2 Chicken Breast)
Corn Tortillas
6-8 Poblano Chiles
7-9 Tomatillos
1 Bunch Cilantro (Optional- blend it with the chile and tomatillos )
2 1/2 Cups of Cheese ( I used Oaxaca)
*Mozzarella, Munster, or queso fresco
2 cups Chicken broth ( keep extra if the sauce is too thick)
2 Tablespoons Knorr Chicken Bouillon
1 Cup Heavy Cream (you can use: Milk or Half and Half)
1 Teaspoon butter
1/2 a medium onion (Optional for the filling)
Nutmeg (Optional)
Salt to taste
Garlic (Optional- blend it with the chile and tomatillos)
