How To make Chicken Macadamia
6 Chicken breast halves;
- boneless 2 Eggs
1/2 c Flour
1/4 c Cornstarch
1 tb Ginger; finely chopped
1 md Onion; grated
1/2 ts Pepper
2 tb Peanut oil
2 tb Brandy
2 tb Soy sauce
6 tb Brown sugar
3 tb Soy sauce
1 1/2 tb Cornstarch
1/2 c Vinegar
3/4 c Water; cold
Mix the following in a blender:eggs, flour, cornstarch, ginger, onion, pepper, peanut oil, brandy, and 2 tbls soy sauce. Marinate the chicken pieces in the batter for 20 minutes. Meanwhile, combine the brown sugar, 3 tbls soy sauce, cornstarch, vinegar and water, in a saucepan. Simmer over low heat for 15 minutes. Deep fry the chicken pieces in peanut oil at 350~ for 8-10 minutes or until done. Drain. Place the
chicken over rice. Spoon the sauce over the chicken and rice. Top with chopped macadamia nuts.

1 Slab Salmon Fillet
1.5 Tbsp Honey
1.5 Tbsp Mustard
1.5 Tsp Thyme (chopped)
1 Tsp Garlic Powder
1 Tsp Parsley (Garnish)
3/4 Cup Bread Crumbs
3/4 Cup Macadamia Nut (finely chopped)
Salt and Black Pepper
Instructions
1. Marinate Salmon Fillet with Salt and Black Pepper. Then, brush some Honey and Mustard over it.
2. Mix 3/4 Cup Bread Crumbs, 3/4 Cup Macadamia Nut, 1.5 Tsp Thyme, 1 Tsp Garlic Powder, 1.5 Tbsp Mustard and 1.5 Tbsp Honey together.
3. Pre-heat oven to 180°C and cover Salmon Fillet with Mixture.
4. Bake for around 15 to 18 minutes.
Garnish with Parsley

15 Minute Macadamia-crusted John Dory Fish Recipe

Today we’re making Macadamia-crusted John Dory Fish.
From start to finish, this only takes 15 minutes
Servings: 2
Just a tip - I'm not a huge fish eater, but i find John Dory fish to have the least fishiest taste.
INGREDIENTS
2 John Dory fish fillets
200 grams of Macadamia nuts
1 teaspoon of olive oil
1 teaspoon of garlic mince
Rind from 1 lemon
Salt & pepper to taste
METHOD
Pre-heat your oven to 180 degrees C (or 356 degrees F)
Put your Macadamia nuts into a food processor and grind down until there half smooth, half small chunks
Put the macadamia back into your bowl and mix in the oil, rind, garlic, salt and pepper
Cover your fish fillets evenly with the Macadamia mixture and pat down firmly
Put in the oven for 10 minutes

I didn't really enjoy this dish. I may try it again using the flour and baking soda instead and adding at least 3 Tbsp. of the sesame seeds. It just didn't have enough of a flavor for me. The mac nuts were weird, to tell you the truth. I'm so used to having it on desserts, that it was weird on my tongue with chicken (lol)
