2 cups chicken
cooked,chopped
2 cups rice :
cooked
1 can cream of chicken soup, condensed
3/4 cup light mayonnaise
1 can waterchestnuts -- drained
1/2 cup chopped onion
1 teaspoon lemon juice
1/2 cup slivered almonds
2 cups corn flake crumbs
1 stick margarine
Preheat oven to 375.
Mix chicken, rice, soup, mayonnaise, waterchestnuts, onion, and lemon juice in 9x13" dish. (Optional: Add 3 chopped hard-boiled eggs.)
Bake 30 minutes. Meanwhile, melt margarine in saucepan. Stir in cornflake crumbs and almonds.
Spread topping on casserole. Bake another 15 minutes.

Olivier salad, known as Persian Chicken salad, is a popular alteration of the Russian potato salad in Iran. The main recipe for this salad is slightly different than the original version, as it’s made with chicken breasts. It’s one of the most beloved Persian street food, that you can also find it as a delicious bite or side dish in Persian gatherings.
INSTRUCTIONS:
1- Cook the chicken breast, potatoes, carrots and sweet peas in salted boil water.
2- Finely dice the pickled cuucmbers. Shredd the chicken breast, and mix potatoes and carrots.
3- Mix all the ingredients in a large bowl.
4- Let the mixture cool overnight.

- 6 or 7 Potatoes
- 1 Small Onion
- 1 or 2 Small Carrots
- 3 pieces of garlic
- 2 Tablespoon Lime Juice

- 3 Teaspoon Salt (too taste, can use less)
- 1/2 Teaspoon black Pepper Powder

1️⃣ Prep
Whisk the eggs in a shallow bowl with the soy sauce. Place the almond flour into a shallow bowl and mix with the paprika. Crush the cornflakes in their bag with a rolling pin and place into another shallow bowl. Peel and finely chop the shallots. Peel the carrot, then use the peeler to create several carrot ribbons. Grate the rest of the carrot.

2️⃣ Bread chicken
Wrap the chicken breasts in cling film and place them on a chopping board. Using the rolling pin, bash the chicken breasts until almost halved in thickness. One by one, place the chicken breasts in the flour, coating both sides. Then dip them in the beaten eggs and finally in the cornflakes, making sure they are well coated. Chill until step 5.

3️⃣ Make sauce
Heat a saucepan over a medium low heat with a drizzle of oil. Once hot, add the shallots, grated carrot and garlic ginger paste and cook for 3 min. Add the curry powder, turmeric, sugar and stock cube. Mix the corn starch with the measured water, then add a little at a time whilst stirring. Add the coconut milk. Simmer for 5 min, then add the soy sauce and remove from the heat.

4️⃣ Make cauli rice
Meanwhile, using a box grater or food processor, grate or blitz the cauliflower until it resembles rice grains. Heat a saucepan over a medium heat with a drizzle of oil. Once hot, add the cauliflower with a pinch of salt and stir-fry for 5 min.

5️⃣ Fry chicken
Heat the oil in large frying pan over medium-high heat. Add the chicken and reduce the heat to medium. Fry for about 4 minutes per side or until golden brown. Place on a plate lined with kitchen towel to remove excess oil.

6️⃣ Serve
Mix the baby spinach with the carrot ribbons and garnish with the sesame seeds. Slice the fried chicken and serve with the cauliflower rice, curry sauce and salad on the side.
