How To make Chicken Peri Peri Sauce
1/4 c Fresh lime juice
2 tb Cider vinegar
1/2 ts Paprika
1/4 ts Angostura bitters
1 ts Hot pepper sauce, or to
-taste 1 Dried hot red chili
1 Fresh chili (such as
-jalapeno) 2 Cloves garlic
2 lb Whole chicken breast, with
-skin and bone Combine the lime juice, vinegar, paprika, bitters and hot pepper sauce in a glass baking dish. Wearing kitchen gloves, split the dried chili with a sharp paring knife and remove the seeds. Do the same with the jalapeno pepper. Mash the peppers with the garlic into a smooth paste using a mortar or an electric spice grinder. Add the paste to the lime mixture in the baking dish and combine. Toss the chicken pieces and swish them in the marinade until they are completely coated. Cover and let marinate overnight in the refrigerator. Remove the chicken from the marinade and grill or broil until cooked through and burnished, about 20 minutes on each side. Baste frequently with the marinade. If the chicken looks like it is beginning to burn, move it farther away from the heat source. Serve hot with chilled orange sections and plenty of napkins. Makes 4 servings. chicken 1.5kg (with skin or without skin)
Salt 1 tsp
Black pepper 1 tsp
Paprika 1 tsp
Peri Peri Sauce:
red bell pepper 1 medium 170g
red onion 1 small 65g
Serrano chilli 2
Bird'seye chilli 6-7
garlic cloves 6-7
oregano 1 tbsp
thyme 1/2 tsp
tomato paste 2 tbsp(optional)
lemon zest 1/2 tbsp
salt 3/4 tbsp
sugar 1/2 tbsp
Paprika 1,1/5 tbsp
white vinegar 2-3 tbsp
lemon juice fresh 3 tbsp
Olive oil 1/3 cup
Spicy Olives:
Black Olives 10-12
Green Olives 10-11
garlic cloves 3-4
coriander 1 tbsp
red chilli 1 large
Black pepper 1/4 tsp
chilli flakes 1/4 tsp
olive oil 2 tbsp
honey 1 tbsp
for rice:
oil 1/2 cup
onion 1 small
Bayleaves 3 small
cinnamon 2 small sticks
tomato 1 medium
Salt 1,1/4 tbsp
garlic paste 1 tbsp
red chilli 2 tsp
Paprika 1,1/2 tsp
turmeric 1/2 tsp
cumin powder 1/2 tbsp
tomato paste 2 tbsp
capsicum chopped 1/2 cup
red bell pepper 1/2 cup
orange bell pepper 1/2 cup
water 5 cups
soaked Basmati rice 500g 2,1/2 cups
lemon juice 1,1/2 tbsp
coriander 2-3 tbsp

This recipe will have you preparing chicken on a regular basis. It can be altered in taste using the variety of Nandos sauces.

◆¼ cup plain yoghurt or sourmilk (maas)
◆1 teaspoon garlic powder
◆2 teaspoons ginger & garlic paste

1 onion
2 whole free range/organic chickens
Marinade
2 red onions
2 red bell peppers
5 thai chilies
2 red cayenne peppers
1/4 cup red wine vinegar
4 limes
1 lemon
1 tbsp sugar
salt and pepper to taste
1 tbsp smoked paprika powder
1 tsp dried rosemary
1 tsp dried thyme
4 garlic cloves
1/3 cup extra virgin olive oil
Roasting Tray
Bunch of: rosemary, thyme
2 red onions
2 whole pieces of garlic
Olive oil
Green sauce
5 cloves garlic
1/3 cup parsley
1/2 red onion
¼ cup fresh oregano
¼ cup extra virgin olive oil

• 400g Boneless Skinless Raw Chicken Thighs (Approx. 100g per thigh)
• 1 tsp Garlic Powder
