How To make Chicken Soup with Mongo Beans
YIELD: 4 SERVINGS:
2 lb Fryer chicken -- cut up in 2
- inch pieces 1 ea Thumb size ginger root or
2 ts Powdered ginger
2 lg Tomatoes quartered
1 sm Garlic cloves :
mashed
3/4 lb Mongo beans -- boiled and
- peeled 2 ea Tb Patis or fish sauce
1 cn Of anchovy fish
- fillets may be used) 1 t MSG
2 ea Tb Oil
Fry chicken in oil until -slightly brown, stirring Constantly. Add ginger and -garlic and stir until
garlic is browned. Add tomatoes until soft, then add 4 cups of water. Add anchovy and cook if it is used instead of patis. Bring to boil, then simmer until chicken is tender. While chicken is simmering, boil beans in water until they are easy to peel. This is done by placing a bean between your fingers and rubbing the skin off the beans. When this is done with ease, remove from stove and drain. Add cold water to beans and then rub beans between your palms until almost all of the beans have been peeled. Keep replacing cold water and peeling will drain with water. When chicken is tender, add beans to soup and cook until soup is thick and beans are soft. Add water, if necessary, 5 minutes before it is done++add the patis if anchovies are not available. Variation: Bitter melons, cut in squares or leafy vegetables such as spinach may be used. Pork may be used instead of chicken.

30 gm-- Pork skin
50 kg-- Bitter gourd leaves
1 Large-- Tomato
1 Large-- Onion
5 Cloves-- Garlic
30 gm-- Ginger
20 ml-- Fish sauce
1/2 Tbsp--Salt
1/2 Tbsp--ground black pepper
2 Pieces-- fresh chili
1 Liter-- Water
Cooking oil
METHOD
First, soak the mung beans to cold water for 2 hours or more to soften the seeds. then washed and put to the cooking pot and add 1 liter of warm water and vegetable stocks. bring it to a boil for 20 minutes then set it aside once the seeds are cooked, use another cooking pan for sauteing the ginger garlic onion and tomatoes cook it for 3 minutes. Now add the chopped chicken and saute for another 3 minutes. add the pork skin and cooked beans fresh chili fish sauce salt and ground black pepper and cook it again for another 10 minutes with cover. Lastly, add the ampalaya leaves and simmer for 5 minutes and it is ready to serve.

My MUNG BEANS SOUP WITH CHICKEN AND ASPARAGUS home cooking recipe...
INGREDIENTS
100 gms (1/2 cup) mung beans
4 cups water
2 to 3 tbsp cooking oil ( I use olive oil)
6 cloves garlic crushed
1 medium onion chopped
12 pcs cherry tomatoes ( or other tomatoes)
300 gms chicken cut into pieces
1 tbsp fish sauce
1 cup additional water
1/4 salt
1/4 tsp pepper powder
12 pcs asparagus cut into pieces
1/2 medium carrot cut into strips
DIRECTIONS
- prepare the mung beans and wash it very well
- boul in 4 cups of water until cook and set aside
- heat a cooking pan
- add cooking oil
- saute the garlic
- add the onion
- add the tomatoes
- add the chicken
- add the fish sauce
- cook over medium heat and cover the pan
- after 30 minutes remove the cover of the pan
- add the cooked mung beans
- cover again the pan and continue to boil
- add additional 1 cup water
- add the salt
- add the pepper powder
- add the asparagus
- add the carrot
- let it simmer for a few minutes until cook
- if done cooking transfer to a serving bowl

GINISANG MONGGO
Ginisang munggo or Mung Bean Soup is a Filipino classic stew made with mung beans, fried pork bits, onion, garlic, tomato, and seasoned with pork cube, pepper and fish sauce. It can be flavoured with different types of meat. it is a Filipino favorite that is packed with lots of nutritional benefits and vitamins. This protein-rich dish is one of the famous dishes known to be “food for the people”. It is a good side dish from fried ulams.

INGREDIENTS
1 cup mung beans
5 cups water
1 cup pork bits
1 medium-sized onion, chopped
3 cloves garlic, minced
2 pcs small tomatoes, diced
1 piece pork broth cube (optional)
pepper to taste
1 to 2 cups rice water or pork broth
salt or fish sauce to taste
1 bunch of leaves (ampalaya/malunggay/sili leaves)
DIRECTIONS
Wash the mung beans and remove the floating ones. Transfer the mung beans in a pot and pour with enough water. Cook until it is soft and mushy.
Heat a pan and add the pork bits until some oil has been rendered.
When the pork bits are starting to brown, push them on one side of the pan. Saute the onions and garlic. Add the tomatoes and gently crush while sautéing.
Add the boiled mung beans and sauté with the rest of the ingredients. Add a pork broth cube (optional).
Season the sautéed mung beans with pepper. Add some rice water or pork broth depending on how soupy you want the sautéed mung beans to be. Simmer for 10 minutes using medium heat.
Season with salt or fish sauce. Add the leaves and submerge gently to cook. Let it simmer for a few minutes.
Transfer the ginisang munggo in a serving plate. Enjoy!
