In this video, we will be making a delicious and juicy Tequila Lime Chicken.
We hope you will enjoy this summer time bbq recipe as much as we enjoyed making it.
Ingredients:
2 lbs Boneless, Skinless Chicken Thighs
3/4 Cup Clear Tequila
1 Cup Orange Juice
2 TBSP Minced Garlic
2 Limes (zest of 1 lime and juice of 2 limes)
1 Jalapeno - diced
Cilantro - chopped
2 tsp Chili Powder
2 tsp Onion Powder
2 tsp Ground Corriander
2 tsp Ground Cumin
1.5 tsp Salt
1/2 tsp Pepper

Grilled Tequila Lime Chicken
Tequila and limes aren’t just for margaritas!
Turn these traditional cocktail ingredients into a zesty and flavorful marinade for grilled chicken. It’s a dinner that’s sure to be a hit all summer long and, if you want to kick up the heat, add some jalapenos!
Grilled Tequila Lime Grilled Chicken
Serves: 8
Ingredients
3 lbs. Gerber's CARE Certified boneless skinless chicken breasts
1 cup tequila
¾ cup Heinen's fresh squeezed orange juice
Juice of 2 limes
Zest of 1 lime
5 garlic cloves, finely minced
2 tsp. Heinen's coriander
2 tsp. Heinen's cumin
2 tsp. Heinen's chili powder
2 tsp. salt
¼ tsp. pepper
2 jalapeños, seeded
Instructions
1. Add the chicken breasts to a casserole pan or plastic Ziploc bag.
2. In a bowl, whisk together the tequila, juices, zest, garlic, spices, salt and pepper until combined.
3. Pour the marinade over the chicken breasts and add the seeded jalapeños. Mix until combined.
4. Marinate in the refrigerator for at least one hour or overnight.
5. Preheat the grill to high heat, between 450°F and 550°F.
6. Remove the chicken and jalapeños from the marinade and place them directly on the hot grill. Cook for 4-5 minutes per side, or until dark grill marks have formed and the chicken is cooked through.
7. Serve the chicken and jalapeños with limes and an optional garnish of chopped fresh cilantro.

BETH'S TEQUILLA LIME CHICKEN FAJITAS
Serves 4

INGREDIENTS:
For Chicken:
1 ½ pound (675 g) of bones, skinless chicken breast cutlets
1 lime, juice, and zest + 2 limes for grilling
3 tbsp (45 ml) tequila
2 tbsp (30 ml) olive oil
1 garlic clove, minced
¼ tsp (1.25ml) salt
½ tsp (2.5ml) cumin
¼ tsp (1.25 ml) red pepper flakes
2 tbsp (30 ml) fresh cilantro, roughly chopped
For Peppers:
1 tbsp (15 ml) olive oil
1 yellow onion, sliced into half moons
1 red Pepper, sliced into strips
1 yellow pepper, sliced into strips
salt and pepper to taste
Pinch dried oregano
For serving:

8 Tortillas
METHOD:
Mix together the marinade in a large bowl. Place chicken inside for 30 mins.
Meanwhile, sauté onions in a skillet until tender and caramelized. Add peppers. Cook peppers allowing them to rest in pan to become slightly charred. For this a cast-iron skillet is ideal. Once tender season with salt and pepper and oregano. Set aside.
Grill chicken and limes on an indoor grill pan 5-7 mins each side until cooked through. Remove and transfer to a plate and allow to rest.
Then grill 8 tortillas on each pan both sides.
Slice chicken on the diagonal and place on a large platter, with the limes. Then place the peppers and tortillas. Serve with guacamole!
