CHILE COLORADO INGREDIENTS:
For the meat:
► 3 lbs boneless beef chuck
► 4 tsp salt
► 1 tbsp black pepper
► 3 tbsp flour
For the salsa:
► 3 cups water
► 3 chiles ancho
► 7 chiles guajillo
► 1/4 white onion
► 3 cups water
► 1 tbsp beef bouillon
► 2 tsp dry oregano
► 1 tsp cumin

INGREDIENTS
(GUAJILLO SAUCE)
8 chile guajillos
1 medium onion
5 to 6 cloves of garlic
1 1/2 tsp Mexican oregano
1 cup chicken broth
(STEW)
3 to 3 1/2 lbs pork shoulder meat
salt and pepper to taste
2 tsp chile powder
1 tsp ground cumin
2 1/2 tbls all purpose flour
2 cups chicken broth
2 dried bay leaves

Chef Aarón Sánchez shares a recipe straight from his Northern Mexican heritage: his Uncle Mario’s famous Chile Colorado. This Chili Colorado recipe has nothing to do with ground beef, beans, or Texas; instead, Chef Aarón showcases a variety of chiles like guajillo, ancho, pasilla, and árbol.
After toasting, soaking, and pureeing the chile, Chef Aarón adds aromatics and broth into a short rib braise. Chef Aarón breaks tradition by serving his burritos as a family-style casserole.

This is one of our favorite, the fry bread is just soooo delicious, tbh this is one of the first recipes I learned because my husband loves it, and I was blessed to have his mom to teach me how to make it, it never gets old.

if you DONT have an instant pot, no problem? boil water in a pot, add meat, onion, garlic, let it come to boil again, skim the foam formed on top of pot, reduce heat to medium, add salt, bouillon, and black perpper, cover and let it cook for 2-3 hours or until meat is nice and tender ????
spice level will depend on the chiles you use
Ingredients: 7-8 fry breads
For the meat:
2.5 lbs chuck tender roast
1/2 garlic head
1/2 onion
Salt i used 5 tsp
1 tbsp beef bouillon
1 tbsp black pepper
4 cups water
for the sauce:
2 bay leaves
3 tbsp oil
3 tbsp flour
10 New Mexico chile pods
chile árbol (optional)
3 garlic cloves
2 1/2 cups of broth
2 tsp New Mexico chile powder
1 tsp oregano
1/2 tsp whole cumin
For the dough:
4 1/2 cups APF
2 tbsp shortening
2 cups warm milk
4 1/2 tsp baking powder
1 tsp salt
