How To make Chili Pie Ii
1 1/2 lb Lean ground beef round
1 md Onion, thinly sliced
12 Ounce, whole kernel corn,
Vacuum-packed can, drained 16 oz Can whole peeled tomatoes,
-undrained 8 oz Tomato sauce with cheese
1 t To 2 t dried chili powder
1 t Salt
1/4 t Pepper
1/3 c Sliced stuffed olives
1/2 c Shredded Cheddar cheese
1 1/2 c Tortilla chips or corn chips
-coarsely crumbled 1. Crumble meat into a deep, 1 1/2-quart, heat-resistant, non-metallic
casserole. 2. Add onions and heat, uncovered, in Microwave Oven 7 minutes or until
meat is browned and onions are tender. Stir occasionally. Drain off excess fat. 3. Add corn, tomatoes, tomato sauce, chili powder to taste and salt and
pepper. Stir to combine. 4. Heat, uncovered, in Microwave Oven 4 minutes, stirring occasionally.
5. Arrange olive slices on top of meat mixture and sprinkle with cheese.
6. Heat, uncovered, in Microwave Oven 3 minutes.
7. Sprinkle with tortilla chips and heat, uncovered, in Microwave Oven 1
minute.

Betty makes the original Fritos Chili Pie Casserole for her family. The recipe originated either with the Frito-Lay Company or Sonic Drive-In Restaurants, where it was once served. If you like chili, cheese, and Fritos, you'll *love* this recipe!

Fritos Chili Pie Casserole
3 cups Fritos corn chips
1/2 large sweet onion, chopped (Note: I used 1 whole large onion in my video, but I think most people will like this recipe better with 1/4 to 1/2 onion, chopped—unless you *really* love onions!)
15 oz. can chili (either with beans or no beans)
1 cup grated American cheese (I used Velveeta.)
Place 2 cups of Fritos corn chips in a baking dish. Arrange chopped onion and half of the grated cheese on corn chips. Pour chili over onion and cheese. Top with remaining corn chips and grated cheese. Bake at 350 degrees for about 15 minutes, until cheese is melted and corn chips on top are beginning to brown. Serve immediately. This is a great dish for kids!!!

Frito Chili Pie | Hilah's Texas Kitchen
In the episode, Hilah cooks up some authentic chuckwagon chili, and then shows you a recipe for Texas's ultimate comfort food - the Frito Pie. FULL RECIPE BELOW

Ingredients
- 4 guajillo chilies (or use 1/3 cup chili powder*)
- 2 pounds ground beef (or bison or venison)
- 1 large onion, diced
- 1 large jalapeño, diced
- 2 tablespoons minced garlic
- 1 pound fresh tomatoes, diced (or 1- 16 ounce can)
- 8 ounces tomato puree
- 2 tablespoons paprika
- 1 tablespoon cumin
- 2 teaspoons salt
- Fritos, grated cheese, pickled peppers, and fresh diced onion to serve
Instructions
Lightly toast the guajillo chilies over a flame or in a dry cast iron skillet, just until they change color in a few spots.
Remove stems (and shake out seeds for less heat) and put in a small pot with 1 cup water. Bring to boil and boil about 10 minutes or until softened. Set aside to cool slightly.
Mince the chilies or puree them in a blender. Keep the cooking liquid.
Brown the meat over medium-high heat in a large pot until no longer pink.
Add onion, jalapeño, garlic, tomatoes and tomato puree.
Add guajillo chilies and cooking liquid.
Add paprika, cumin and salt.
Stir and simmer 45 minutes to an hour, uncovered.
Serve with Fritos corn chips, cheese, onion and jalapeños.
Serves 8-10
*If using chili powder, just add it when you add the paprika and cumin.
