3 bls (1.361 kg) ground beef (I used 85 / 15 fat to meat ratio)
1 medium to large onion finely chopped
5 cloves garlic minced
6 Tbsp (40 g) chili powder (I used McCormick Brand)
3 tsp (7 g) smoked paprika
3 tsp (8 g) garlic powder
3 tsp (8 g) onion powder
3 tsp (7 g) ground cumin
3 Tbsp (49.5 g) tomato paste
7 cups (1.65 L) low sodium beef broth
1 chipotle pepper in Adobo sauce
2 Tbsp Adobo sauce from can of chipotle peppers
2 - 15 oz cans pinto beans (drained and rinsed)
salt and pepper to taste
*For corn starch slurry*
4 Tbsp (35 g) corn starch
4 Tbsp (60 ml) cold water
INSTRUCTIONS
- In a preheated on a medium high heat 6 .5 qt pot add 3 tbsp oil and ground beef
- Add salt and pepper to taste, cook ground beef for 5 to 8 minutes
-Now add garlic and onion, combine and continue to cook for 3 to 5 minutes
- Next add and combine all dry seasonings and spices to cooked ground beef
- Now add tomato paste, combine and cook for a minute or two
- Next add beef broth, stir and mix well
- Add chopped chipotle pepper, adobo sauce and bring to a boil
- Cover pot with a lid, lower the heat and gently simmer for 1 hour stirring through out
- After and hour add cornstarch slurry to thicken chili
- Add drained and rinsed pinto beans combine and simmer for and additional 15 minutes then serve

I have been in the kitchen cooking since I was 9 years old with my mom our famous Lazy Mans Chicken with Rice as a young adult I started making my own recipes which includes my famous mustard fried chicken as well as mustard fried pork chops, Po man's peach dumplings, steak meat rice with gravy and spaghetti with turkey sausages as well as my Asian Inspired Bake Chicken with Rice and Gravy Recipe which is 30 years just to name a few

COPYCAT RECIPES! | Chili's 2 for $25: Salsa, Pasta & Cookie Skillet
Hey, hi, hello everyone and welcome back to Morgs' Menu!
In this video, I show you how I prepare a copycat 2 for $25 at one of my FAVORITES… Chili’s!! They are all SUPER simple to pull together and I was really happy with how everything turned out! However, I would modify one of the recipes slightly so make sure you watch the full video to see my tips for improvement!

Step-by-step of this video below:
Chili’s Salsa
Ingredients-
1/4 cup diced yellow onion
1 can whole tomatoes plus juice
1 can Rotel diced tomatoes with green chilies
1 tsp. minced garlic
2 tsp. cilantro
1/2 tsp. salt & pepper
1/2 tsp. cumin
1/4 tsp. sugar
2 tbsp. limejuice
2 tbsp. diced jalapeños (or dash cayenne pepper)
Instructions-
1. Dice onion and jalapeños
2. Add in onion and whole tomatoes into a blender or food processor
3. Pulse for a few seconds to combine – be sure not to over blend
4. Add in Rotel tomatoes, garlic, cilantro, salt, pepper, cumin, sugar, and lime juice
5. Pulse for a few seconds to combine – be sure not to over blend
6. Add in either diced jalapeños or cayenne
7. Store in the fridge overnight or for at least 2 hours (the longer the better)
8. Serve with your favorite tortilla chips

Cajun Chicken Pasta
Ingredients-
2 small chicken breasts (about ½ lb.)
4 – 6 oz. penne pasta
2 tsp. smoked paprika
½ tsp. oregano
½ tsp. thyme
1 ½ tsp. garlic powder
Dash cayenne pepper
2 tbsp. butter
1 – 2 cups half and half
1 tsp. lemon pepper seasoning
¼ - ½ cup diced tomatoes
2 tbsp. parmesan cheese
Salt & pepper to taste
Instructions-
1. Dice tomatoes
2. Cook pasta according to box directions – drain and set aside when finished
3. Coat chicken breasts in paprika, oregano, thyme, 1 tsp. garlic powder, cayenne pepper, and salt & pepper
4. Cook chicken in a pan at medium heat with ½ tbsp. butter about 5 – 6 minutes per side (time will vary based on thickness of chicken)
5. In a medium pan, melt 1 ½ tbsp. butter
6. Add in half and half, ½ tsp. garlic powder and lemon pepper seasoning
7. Cook sauce until at a low simmer (add in flour to thicken if needed), stirring occasionally
8. Once sauce has thickened, add in pasta and stir to combine
9. Slice chicken breasts
10. Serve pasta and sauce on a plate and in a bowl
11. Top pasta with chicken breasts, tomatoes, and parmesan cheese
This recipe makes about 2 servings.

Chocolate Chip Cookie Skillet
Ingredients-
½ cup butter (softened)
½ cup white sugar
½ cup brown sugar
1 tsp. vanilla extract
1 large egg
1 ½ cup flour
½ tsp. baking soda
¼ tsp. salt
½ cup chocolate chips
Instructions-
1. Preheat oven to 350 F
2. In a small bowl, add in flour, baking soda, and salt – mix with spoon to combine
3. In a medium bowl, add in softened butter, white sugar, and brown sugar - mix with hand mix to combine
4. In the medium bowl, add in vanilla extract and egg – mix with hand mixer until smooth
5. Add dry ingredients into medium bowl and mix with hand mixer, switching to spoon at the end
6. Add in chocolate chips and fold-in to combine
7. Grease inside of a 8 inch cast iron skillet with butter
8. Add in cookie dough and press down to an even layer
9. Cook for 15 – 20 minutes, check doneness with toothpick
10. Serve with ice cream (if desired)

Simple, Perfect Chili

Ingredients
2 pounds ground beef
2 cloves garlic, chopped
One 8-ounce can tomato sauce
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon ground oregano
1 teaspoon salt
1/4 teaspoon cayenne pepper
1/4 cup masa harina
One 15-ounce can kidney beans, drained and rinsed
One 15-ounce can pinto beans, drained and rinsed
Shredded Cheddar, for serving
Chopped onions, for serving
Tortilla chips, for serving
Lime wedges, for serving
Directions
Place the ground beef in a large pot and throw in the garlic. Cook over medium heat until browned. Drain off the excess fat, and then pour in the tomato sauce, chili powder, cumin, oregano, salt and cayenne. Stir together well, cover, and then reduce the heat to low. Simmer for 1 hour, stirring occasionally. If the mixture becomes overly dry, add 1/2 cup water at a time as needed.
After an hour, place the masa harina in a small bowl. Add 1/2 cup water and stir together with a fork. Dump the masa mixture into the chili. Stir together well, and then taste and adjust the seasonings. Add more masa paste and/or water to get the chili to your preferred consistency, or to add more corn flavor. Add the beans and simmer for 10 minutes. Serve with shredded Cheddar, chopped onions, tortilla chips and lime wedges.

Ingredients & Shopping List:
+ For the chili con carne:
2 pasilla chiles (dried whole)
4 arbol chiles (dried whole)
4 chipotle chiles (dried whole)
3 guajillo chiles (dried whole)
3 ancho chiles (dried whole)
1 whole chuck roast
Vegetable oil
1 white onion, roughly chopped
6 cloves garlic, crushed
4 cups chicken stock
Cinnamon
Ground allspice
Ground coriander
Dried oregano
2-3 Tbsp tomato paste
2-3 Tbsp masa harina
2 limes, juiced
Shredded cheese, for garnish
+ For the vegetable stock:
1 white onion
4 ribs celery
1 bulb fennel
1 parsnip, peeled
3 carrots
1 leek
1 small head cauliflower
2 beets
Vegetable oil
Sprigs of fresh thyme
Small head of garlic, halved
1 bunch parsley
2 dried bay leaves
1 Tbsp whole black peppercorns
1 handful dried porcini mushrooms
2 sheets dried kombu
+ For the vegetarian chili:
2 pasilla chiles (dried whole)
4 arbol chiles (dried whole)
4 chipotle chiles (dried whole)
3 guajillo chiles (dried whole)
3 ancho chiles (dried whole)

3 poblano peppers
3 jalapeno peppers
2 large onions, roughly chopped
Olive oil
6-7 cloves garlic, roughly chopped
2-3 Tbsp tomato paste
3 tsp toasted cumin
Ground coriander
Dried oregano
1 can cannellini beans, drained and rinsed
1 can kidney beans, drained and rinsed
1 can pinto beans, drained and rinsed
14oz can diced tomatoes
14oz can fire-roasted diced tomatoes
1 tsp liquid aminos
2 Tbsp nutritional yeast
3 cups vegetable stock (ingredients above)
Sour cream and sliced jalapenos, for garnish

Ingredients:
Water, 2 cups
Ketchup, 3 tbsp
Sugar, 1/2 cup
Pepper
Chili, 2
Cornstarch slurry (2 tbsp cornstarch + 2 tbsp water)
Mix everything under low heat until well-blended.
