Chicken and Potato Chip Casserole!
Today we are doing a chicken casserole with a twist! That's right, we're making this casserole with potato chips. Yum!!! Not only is this recipe unique, but it's also so easy. The actual prep is longer than getting everything cooked and ready. It's three whole steps (cook chicken, combine everything, and cook). And, this uses ingredients that are easy to find at any store. In fact, you most likely already have these ingredients in your pantry. Also, you can substitute Turkey for chicken! You can also make this the night before and put it in the fridge overnight. Just make sure to let it come to room temperature before cooking it the next day!

Ingredients:
-4 lbs chicken breast
-3 10 3/4 oz cans (standard can) cream of chicken soup
-2.5 cups of celery, chopped
-2 small onions, chopped
-1 cup mayonnaise
-8 oz lays classic potatoes chips
Directions:
-Preheat oven 350.
-Cut chicken breast into bite-sized cubes.
-Sauté chicken for 8 min in 1 tablespoon of butter and 1 tablespoon of oil on medium-high. Stir frequently. Add salt and pepper to taste.
-Once the chicken is cooked, add celery, onions, cream of chicken, and mayonnaise. Stir together.
-Put half of the mixture into an oven-safe casserole dish.
-Put half of the potato chips (crushed) onto the casserole.
-Spread the rest of the chicken mixture on top of the chips.
-Layer the rest of the chips on top of that.
-Bake at 350 F for 30 minutes and enjoy!

This is a recipe that I have been seeing for some time on the internet and Pinterest for Million Dollar Chicken Casserole. I did try it early on but wasn't quite captivated by it's flavors. So recently I decided to try it again and put my own spin on it. I only changed a few things but now I think we have a winner. It is so easy to make and I think y'all will love it. So here ya go.
Ingredients:
3 1/2 - cups chopped cooked chicken
4- oz. cream cheese, softened
1 cup cottage cheese
½ cup sour cream
1 cup pimento cheese
8 strips bacon cooked and crumbled
1 can cream of bacon soup (or cream of chicken)
1/2 tsp garlic powder
1/2 tsp dried onion powder
1/2 tsp dried sweet basil
1 sleeve Club® crackers, crushed
5 tablespoons butter, melted.
Preheat oven to 350ºF and spray a 9×9-inch baking dish with cooking spray.
Combine chicken, cream cheese, cottage cheese, sour cream, bacon, pimento cheese, garlic powder, onion powder, basil and cream of bacon soup.
Spread into prepared pan.
Combine crushed Club® crackers and butter, sprinkle over chicken mixture..
Bake uncovered 30 to 40 minutes until bubbly and toasted golden on top.
