▼Ingredients 48 Chocolate Bonbons
400g Chocolate 55-70%
100g Hazelnuts
50g Powdered sugar
100g Milk chocolate
30g Butter
50g Feuilletine ＊optional

※Never let the chocolate harden in the refrigerator after it has been temperature-controlled. The sugar and fat will come out on the surface of the chocolate and it will turn white. Once the chocolate has hardened, leave it for a day. You can put it in the refrigerator the next day.
The ideal temperature for hardening chocolate is 15-20℃. Once the chocolate has hardened, it can be placed in the refrigerator from the next day.
It must be followed if you want to make good chocolate.

バレンタインに！チョコレート・トリュフの作り方＆ラッピング

手作りバレンタイン派さんへチョコレート・トリュフのレシピです。
外側をチョコでコーティングしてお店のような高級感のある仕上がりにしてみました。
柔らかく口溶けのいいトリュフに仕上げるために、
ビターチョコとホワイトチョコをWで使っています。
外側のコーティングチョコは、センターのトリュフに合わせて
柔らかい食感にしてみました。
ホワイトチョコを入れるのがちょっと...という方は
ホワイトチョコの分をビターチョコやスイートチョコに置き換えてもOKですよ。

▷材料（27個分）：
■チョコレートトリュフ
クーベルチュールビターチョコレート（カカオ分70％）２１６ｇ
クーベルチュールホワイトチョコレート（カカオ分28％）５４ｇ
生クリーム　１５０ｍｌ

■コーティング用チョコレート
クーベルチュールビターチョコレート　１５０ｇ
太白ごま油　１５ｇ

ホワイトチョコレート（コーティング用）
ピスタチオ
フリーズドライフランボワーズ
アーモンドダイス　など

▷生クリームを1パック（200ml）で作る場合の材料：
■チョコレートトリュフ
クーベルチュールビターチョコレート　２８８ｇ
クーベルチュールホワイトチョコレート　７２ｇ
生クリーム　２００ｍｌ

▷作り方：
１．トリュフを冷やし固める型を作る。厚紙を21cm×18cmの大きさに切り、内側から3cmのところに印をつける。厚紙に切込みを入れて折り、テープで止めて15cm×12cm、高さ3cmの箱を作る。内側にクッキングシートを敷いておく。

２．ボウルにクーベルチュールビターチョコ216g、クーベルチュールホワイトチョコ54gを入れ、湯煎にかけてなめらかな状態になるまで混ぜながら溶かす。チョコが溶けたら湯煎から外す。

３．鍋に生クリーム150mlを入れて弱火で50〜60℃に温める。②のチョコレートに温めた生クリームを注ぎ入れ、チョコと生クリームがなめらかな状態になるまで乳化させる。

４．①で作った型に流し入れ、冷蔵庫で1時間半〜2時間冷やす。
※紙がはがせるくらい冷えて固まるくらいが目安です。

５．まな板の上にクッキングシートを敷き、ココアパウダーをうっすら振りかける。固まったトリュフを移し、温めて水気を拭き取ったナイフで25mm×25mmの大きさに切りそろえる。
切りそろえたトリュフはラップをして冷蔵庫で３時間〜冷やす。
※四角いトリュフは最大20個できます（1個あたり15〜16g）。移動するときにくっついちゃったトリュフがあったので、動画外で⑥の作業のときに丸めました。

６．切り落とした端っこのトリュフは15〜16gに分けて大まかに丸め、冷蔵庫で３時間〜冷やし、再度きれいに丸め直す。
※切り分けたあと、トリュフが温まって柔らかい場合は冷蔵庫で15分ほど冷やすと丸めやすいです。一度に丸めようとすると難しいので、1回目は形にするだけ、2回目はきれいにする作業に分けるとストレスなくはかどります＾＾

７．コーティング用のチョコレートを作る。クーベルチュールビターチョコ150gを湯煎に当ててなめらかな状態になるまで溶かす。

８．太白ごま油15gを加えてしっかり混ぜ合わせる。
※チョコレートに10〜15％の油を加えて、パリッとしすぎず、でもコーティングしたら固まる固さにしています。また油を入れることでテンパリングを省略しています（テンパリング苦手民）

９．冷やして固まったトリュフに竹串を刺して⑧のチョコレートでコーティングする。冷蔵庫で15分ほど冷やして固める。
※チョコレートフォークも使ってみましたが竹串のほうが断然やりやすかったです（コーティング苦手民）竹串を刺す発泡スチロールがあると便利。
※ホワイトチョコはビターチョコやスイートチョコに比べて固まりにくいので、市販のコーティング用ホワイトチョコを使ったほうが良いです。

１０．チョコレートを線がけしたり、ピスタチオ、フリーズドライフランボワーズ、アーモンドダイスなどを飾って完成です。
