How To Make A Chocolate Sheet Cake Recipe | Sorted Food

How to Make Texas Sheet Cake for Two (Small Size Chocolate Sheet Cake)
Small Batch Texas Sheet Cake is just the perfect amount for 2-4 people.

Cake Ingredients:
1/2 cup all purpose flour
1/2 cup granulated sugar
1/4 tsp salt1/4 cup butter
1 heaping Tbsp cocoa powder
1 egg yolk
1 1/2 Tbsp buttermilk
1/4 cup hot water out of the tap
1/4 tsp baking soda
1/4 tsp vanilla
Frosting Ingredients:
2 Tbsp butter
1 1/2 Tbsp milk I use whipping cream but can also use buttermilk
1 Tbsp cocoa powder
1 cup powdered sugar
1/4 tsp vanilla
Cake Directions:
Mix together flour, sugar and salt in a small mixing bowl.
In a small sauce pan combine butter, cocoa and water. Stir until butter melts and mixture comes to a boil.
Pour mixture over dry ingredients and stir to combine.
Add in egg yolk, buttermilk, baking soda and vanilla. Stir to combine.
Pour mixture into a greased 9 x 7 inch baking pan.
Bake at 350 degrees for 15 minutes or until toothpick comes out clean.
Frosting Directions:
As soon as cake comes out of oven mix up frosting.
In a small sauce pan combine butter ,milk, cocoa powder, and powdered sugar.
Stir until butter melts and ingredients are combined. Frosting will be thin. Do not allow it to boil.
Add in vanilla.
Pour hot frosting over hot cake out of the oven.
Spread to cover cake.

CHOCOLATE SHEET CAKE | Chocolate Cake Recipe | Chocolate Icing Recipe
Today I am cooking at home and making a delicious chocolate sheet cake also known as a Texas sheet cake. This recipe is easy and the perfect sized sheet cake for a weeknight dessert.
In the video, while making the icing, I used double the amount of evaporated milk which was a mistake. A 1/4 cup of evaporated milk is what should be used for the ratio of ingredients. I have included the correct amounts below in the INGREDIENT section of the description.

INGREDIENTS
1/4 cup (28 g) unsweetened cocoa powder
1/2 cup (118 ml) water
1/2 tsp instant coffee
8 Tbsp (113.5 g) unsalted butter
1 cup (130 g) all-purpose flour
1 cup (198 g) dark brown sugar
1/2 tsp salt
1/2 tsp baking soda
1/4 tsp ground cinnamon (optional)
1/2 cup (118 ml) buttermilk
1 large egg
1 tsp vanilla extract
9 x 13-inch baking pan
Bake @ 350ºF / 176ºC for 13 to15 minutes
NOTE: If you double this recipe, use a 10 x 15 x 2-inch baking pan, the cook time should be about the same.
CHOCOLATE ICING
6 Tbsp (84 g) unsalted butter
1/4 cup (60 ml) evaporated milk
1/4 cup (28 g) unsweetened cocoa powder
1 3/4 cups (185 g) powdered sugar
1/4 tsp salt
1/2 cup chopped pecans (optional)
*Due to my son's tree nut/peanut allergy I leave this out

Birthday Sheet Cake

Yield: 1 (12x18-inch) cake
Ingredients
For the cake:
18 tablespoons (2 1/4 sticks) unsalted butter, at room temperature
3 cups sugar
6 extra-large eggs, at room temperature
8 ounces (about 1 cup) sour cream, at room temperature
1 1/2 teaspoons pure vanilla extract
1 lemon, zested
3 cups all-purpose flour
1/3 cup cornstarch
1 teaspoon kosher salt
1 teaspoon baking soda
For the frosting:
24 ounces semisweet chocolate chips
1 1/2 cups heavy cream
2 tablespoons light corn syrup
1/2 teaspoon pure vanilla extract
4 tablespoons (1/2 stick) unsalted butter, at room temperature
Chocolate candies for decorating (recommended: M&M's)
Directions
Preheat the oven to 350 degrees F. Butter and flour a 12 by 18 by 1 1/2-inch sheet pan.
To make the cake, cream the butter and sugar on medium-high speed in the bowl of an electric mixer fitted with a paddle attachment until light and fluffy, about 5 minutes. On medium speed, add the eggs, 2 at a time, then the sour cream, vanilla, and lemon zest, scraping down the bowl as needed. Mix well. Sift together the flour, cornstarch, salt, and baking soda. With the mixer on low speed, slowly add the flour mixture to the butter mixture and stir just until smooth. Finish mixing by hand to be sure the batter is well mixed. Pour evenly into the pan, smooth the top with a spatula, and bake in the center of the oven for 25 to 30 minutes, or until a toothpick comes out clean. Cool in the pan to room temperature.
For the frosting, place the chocolate chips and heavy cream in a bowl set over a pot of simmering water, stirring occasionally, until the chips are completely melted. Off the heat, add the corn syrup and vanilla and allow the chocolate mixture to cool to room temperature. In the bowl of an electric mixer fitted with the whisk attachment, whisk the chocolate mixture and softened butter on medium speed for a few minutes, until it's thickened.
Spread the frosting evenly on the cake. Have the children decorate the cake with chocolate candies.

For the Cake
2 cups all-purpose flour
2 cups sugar
½ teaspoon salt
1 teaspoon baking soda
½ cup buttermilk
1 teaspoon vanilla extract
2 large eggs
4 heaping tablespoons cocoa powder
¼ teaspoon instant coffee
1 cup of water
1 cup butter
For Icing
½ cup butter
5 teaspoons cocoa
4-6 tbsp milk
1 tsp vanilla
3 ½ cups powdered sugar
Sprinkles, if desired
Cake
Preheat the oven to 350 degrees F. Grease a 9x13 baking pan and set aside.
In a large bowl, combine the flour, sugar, salt and baking soda. Stir together and set aside.
In another bowl, whisk the buttermilk, vanilla and eggs and set aside.
In a medium saucepan, add the cocoa, the coffee and the water. Whisk together to combine and everything is smooth. Add in butter and stir until melted over medium-high heat. Remove from heat and pour over flour mixture and stir until incorporated. Add in buttermilk mixture. Stir until combined. Pour batter in the prepared pan and bake for 40-45 minutes.
Icing
Melt the butter in a small saucepan over medium heat. Add in cocoa powder, milk, vanilla and powdered sugar and whisk to combined. Spread on top of warm cake and top with sprinkles. Enjoy!
