How To make Corn Pone
1/2 pound pinto beans
cooked
1/2 cup onion :
chopped
CRUST: 1/2 cup cornmeal
1/2 cup flour, all-purpose
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup nonfat yogurt
1/4 cup water
1 teaspoon sugar
1/2 teaspoon cayenne
Soak pinto beans over night. Bring to boil, reduce heat and cook until beans are tender. Cook onions in veggie broth or wine. Combine with beans. Place in casserole dish. For the crust, mix together the cornmeal, flour, baking powder, and salt. Gradually add the yogurt and water, then mix until smooth. Stir the sugar and cayenne into the batter. Pour onto the bean and onions. Cook in 350 degree oven until the top is bubbling and the crust is just beginning to brown at the edges.

BARBADOS SWEET CORNMEAL PONE
Barbados Cornmeal pone is a favorite dessert, it is firm in texture, with a sweet and savory taste. This pone is made with fine yellow cornmeal, coconut milk and spices.
Recipes calls for
3 cups of fine cornmeal
5 cups of coconut milk
1 tsp cinnamon
1 tsp nutmeg
1 cup butter
2 cups sugar
1/2 cup flour
1 pkg of coconut powder (optional)
2 tsp nut meg
1 tsp almond
1 tsp salt
Melt sugar and butter in coconut milk on stove
combine cornmeal, flour, 1 Pkg (coconut powder optional)
cinnamon, nutmeg, salt mix together.
Add coconut mixture to cornmeal mixture and stir making sure there is no lumps
Leave 1/4 cup of coconut mixture back, add to pone after 1 hour in oven.
Transfer pone mixture to oven, bake for 1 hour, remove add remaining mixture place back in oven for 15 mins.
For dipping sauce
1/2 can sweeten condense milk
1 tsp coffee
1 dash Irish cream (optional)
A dash Barbados rum
Serve and enjoy Yum Yum
