Unfortunately, though, most of us have relegated meatloaf to mere childhood memories and don't ever really allow ourselves the simple pleasure of loafing it up. But we would do anything for meatloaf! Not the singer, obviously, but the dish, and so we worked hard to develop a recipe that takes the classic meatloaf and firmly establishes it in the 21st century. Filled with ham, cheese, garlic & herb cream cheese, and eggs, this ain't your mama's meatloaf, folks!

You'll Need:
For the meatloaf:
- 1½ lbs ground beef
- ½ cup bread crumbs
- 2 eggs
- 1 onion, diced
- 2 garlic cloves, minced
- salt & pepper to taste
For the filling:
- 2-3 ham slices
- ¾ cup garlic & herb cream cheese
- 3-4 Gouda or Swiss cheese slices
- 3 eggs
Here's How:
1. Preheat the oven to 350°F. Grease a 9 x 5-inch loaf pan with butter and swirl some bread crumbs around the inside of the pan so they stick to the butter. Combine the ground beef, bread crumbs, eggs, onion, salt, and pepper, and transfer the meatloaf mixture to the greased loaf pan. Press a tall glass into the loaf pan horizontally to create an indent in the center.
2. Line the indent with the ham slices.
3. Cover the ham with the garlic & herb cream cheese.
4. Cover the cream cheese with the cheese slices.
5. Crack 3 eggs over the cheese.
6. Transfer the loaf pan to the oven and cook for 60 minutes.

Rustic Stuffed Meatloaf
Growing up I always looked forward to meatloaf night.The only problem was that my mothers version of meatloaf was ground beef, mixed with breadcrumbs and not much else. It was bland, but as a kid if I used enough ketchup, I loved it.
But now as an adult, I realize that meatloaf can and should be so much more.
So I decided to revisit the meatloaf of my mother and make it mine. About the only thing that I kept from her old recipe is the ground beef. But I replaced the usual ground beef with 100% pastured ground beef from my friends at KOL Foods. (
This is comfort food at its best. Perfect for the family and trust me, your kids will not be smothering this meatloaf in ketchup the way I used to.

Meatloaf Made With Boxed Stuffing Mix
Meatloaf made with Great Value Dry Stuffing Mix.( Use Any Stuffing Mix of your choice )
Ingredients Needed:
2 Large Eggs
2 Pounds Ground Beef
Box of Stuffing Mix (Your Choice )
Small Onion Chopped
1/2 c. Bbq Sauce
1/2 c. Ketchup
Put 2 Pounds of Ground Beef in a bowl
Pour in the Stuffing Mix
Add 2 Large Eggs
Add Small Chopped Onion
Add 1/4 c. Ketchup and 1/4 c. Bbq Sauce together (Mix and add to Meat Mixture )
Add Salt if you want ( Don't Really Need It )
Add 1/2 tsp. Garlic Powder
Mix all the ingredients together
Next :
Add Mixed Meat Mixture to a 9X13 in. pan
Use Loaf Pans if you prefer.
Mash Mixture out to fill your pan
Go around all the edges of the meat and push it slightly away from the sides to drain the grease off easily.
Mix another 1/2 c. Ketchup and 1/2 c. BBQ Sauce together and add to the top of Meatloaf.
Put in oven uncovered for 1 hour at 350 Degrees
Remove the Grease as needed.
Let Cool And Eat

INGREDIENTS
1-2 lbs meat of choice .. you can use ground chicken. beef. or turkey
* used 3 lbs which can serve 6-7 people .. keep in mind meatloaf is great for leftovers such as sandwiches etc.. this also freeze well, just wrap in seran wrap and freeze*
3 slices bread
1 cup milk
eggs * 1 egg per lb of meat used *
desire amount chopped bell pepper and onion ( I used about 1/2 each*)
3 tbs wortchesire sauce
3 tbs onion and garlic powder
1 tbs salt
2 tbs beef bouillon ( or 2 packs onion soup mix )
1/2 cup bbq sauce ( or desire amount )
To make the glaze *This is to taste so please adjust to your liking *
1 cup ketchup
1/3 cup brown sugar
1/2 cup bbq sauce
3 tbs wortceshire sauce
STUFFED MEXICAN CORNBREAD: QUICK WEEKNIGHT DINNER
As always, I over purchased in food preparation for Thanksgiving. With the leftover boxes of Jiffy cornbread mix I decided to make some stuffed mexican cornbread. This uses mostly pantry staples and things you probably already have in your kitchen.
This took longer in the oven this time than it usually does. I'm not sure if it is because I doubled it or if my oven is going out, but this usually only takes about 18-20 minutes, so watch your time. Toss in some extra jalapenos to pretty it up and add a little bite.
Ingredients: (this serves a lot!)
1 medium onion
1 bell pepper chopped
1 lb ground beef or ground pork
4 boxes of Jiffy Cornbread, made per directions
1 pkt taco seasoning mix
1/2 can black beans drained, rinsed
1/2 can corn drained
1 can rotel, undrained (can use diced tomatoes if you dont want spice)
couple cups fresh spinach
2 cups cheese for cornbread, plus a little for sprinkling on top
