How To make Cornmeal Hoecake
2 c Sifted corn meal
-- Water, cold, to mix 1/2 ts Salt
Mix meal with water sufficient to handle. Let stand a few minutes to see if more water is needed to spread. Have a heavy griddle greased and hot, pour on the mixture and pat out into a round cake, having about one-half inch thick; reduce fire and let brown, turn and brown other side. Cook altogether about thirty minutes. Serve hot with butter. Mrs. S. R. Dull, 1928

1 Tbsp (12 g) baking powder
1 Tbsp (12.5 g) sugar
1/2 tsp salt
1 large egg
1 Tbsp (15 ml) cooking oil
1 cup (236.5 ml) milk
butter for griddle

Looking for the perfect hoecake recipe? You’ve come to the right place! On this week of What’s Cooking Wednesday, Paula shares her famous hoecake recipe.
INGREDIENTS:
1 cup self-rising flour
1 cup self-rising cornmeal
2 eggs
1/3 cup water
3/4 cup buttermilk
1 tablespoon granulated sugar
1/4 cup vegetable oil (or bacon grease)
DIRECTIONS:
1. Mix all ingredients together except frying oil.
2. Heat oil in a large cast iron skillet over medium heat.
3. Drop mixture 3 tablespoons at a time into hot skillet.
4. Brown until crisp; turn and brown on other side.
5. Drain on paper towel and serve with butter.
