1/2 lb Crabmeat (7 oz. can) 1 Stick margarine 1 Jar Old English Cheese 1/2 ts Garlic salt 2 tb Mayonnaise 1/2 ts Season salt 6 English Muffins Contributed to the echo by: Theresa Merkling CRAB MUFFINS Mix together all except muffins. Spread on muffins. Cut muffins into quarters. Freeze on cookie sheet. Put in bag and store in freezer until needed. Broil and serve.

Makes 12 muffins Ingredients: For the muffins: 2 Apples 1 Egg, large 1/2 cup (120ml) Milk 1/3 cup (80ml) vegetable oil 1¼ cups (160g) Flour 2 teaspoons Baking powder 1/4 teaspoon Salt 3/4 cup (150g) Sugar 1 teaspoon Vanilla extract For the crumble: 1/4 cup (60g) Butter, cold 1/2 cup (65g) Flour 1/2 cup (100g) brown Sugar 1 teaspoon Cinnamon
Directions: 1. Preheat oven to 350F (175C). Line a 12-cup muffin pan with muffins liners, spray the cups with oil (optional) and set aside. 2. Make the muffins: In a bowl mix milk, oil, egg and vanilla extract. Set aside. 3. In a separate bowl, combine flour, baking powder, sugar and salt. 4. Peel the apples and cut into small chunks. Place apple chunks into the flour mixture and toss well to ensure the apples are well coated. 5. Pour the wet mixture into the dry mixture and mix until combined. 6. Scoop the batter into muffin cups until 3/4 full. 7. Make the crumble: Combine the ingredients for the crumble topping together in a small bowl and crumble together using your finger tips. 8. Sprinkle some crumble on top of each muffin batter. Bake for 20-25 minutes, until a toothpick inserted into the center comes out clean. 9. Let cool before serving.

Crabapple Jelly Muffins ????????

Ingredients:
2 cups flour 1/3 cup sugar 1/3 cup brown sugar 1/2 teaspoon salt 1 tablespoon baking powder 3/4 cup milk 1 egg 1/2 cup melted margarine 1 teaspoon vanilla 1/3 cup crabapple jelly
Directions:
Preheat oven to 400 degrees F & put muffin liners in a muffin tin. (This recipe made 17 muffins for me so I used 2 tins & put water in the empty tins).
In a large bowl, pour in the flour, sugars, salt & baking powder & stir to combine.
In another smaller bowl, pour in the milk, egg, margarine & vanilla & stir to combine.
Make a well in the dry ingredients & add the bowl of liquid. Stir just until combined.
Put some batter in the muffin liners to fill about 1/2 full. Add a teaspoon of the jelly on top of each & then add a little more of the batter to cover the jelly so the tins are about 3/4 full.
Bake in the preheated oven for about 20 minutes or until a toothpick comes out clean. I turned the tins around after 10 minutes for more even baking.
Once cooked, remove from the oven & let cool for 5 minutes before removing from the pans.
Transfer to paper towel to continue cooling.
