24 Cooked crawfish tails 1/4 cup White vermouth 1 tablespoon Shallots -- minced 1/2 teaspoon Dill weed 1/2 cup Heavy cream 24 sm Capers 12 sm Pastry shells Put the crawfish in the vermouth to marinate for 15 minutes. Strain the vermouth into a non-aluminum pan and add the shallots and dill. Reduce by 1/2 and add the cream & capers.Reduce by half or until slightly thickened. Add the tails. Divide among pastry shells and garnish with a sprig of fresh dill. Serve hot, warm or room temperature. Serves 12 (wrv)

Hi lovelies, are you ready for another appetizer recipe? :) I have really enjoyed creating these simple appetizers for you and well, if I am completely honest, it has not been too bad eating them as well :D I have another one coming next week and then I won't be doing them weekly anymore, but once in a while. Todays recipe is also with two different options and both are with seafood and cucumber. Both of these appetizers are really light and fresh. With virtually no cooking involved, these Shrimp Salad and Avocado Puff Pastry Shells come together so quickly. All you have to do is bake the pastry! This is one of those perfect dishes that you can make ahead for summer entertaining.
This elegant, delicately-flavoured appetizer of shellfish mousse sat on a crisp, tender chicory leaf is a heavenly, aromatic addition to your canape menu. Fresh but indulgent, your guests won’t need much persuading to dive in to these mouth-watering amuse bouche. It’s a guaranteed crowd-pleaser that goes well with a crisp glass of white wine or sparkling champagne.
WHAT STEPS DO I FOLLOW? 1.Take the cooked lobster meat, crayfish tails, fresh dill, zest and juice of the lime and soft cheese and place into a food processor
2.Pulse the mixture until combined
3.Peel the chicory leaves apart, selecting the smaller sweeter leaves and wash thoroughly
4.Trim the back of the leaves to allow them to sit on the plate
Pour the lobster and crayfish mousse mixture into a piping bag with a wide piping nizzle attached
Pipe the lobster and cray fish mixture on to the chicory leaf
Dress with the remaining crayfish tails and lime rind
