Crunchy Taco Bites

Ingredients
1/2 pound lean ground beef
1/4 cup grated onion
2 tablespoons plain breadcrumbs
2 tablespoons taco seasoning
1 large egg, plus 1 large egg white, lightly beaten
2 ounces cream cheese, at room temperature
1/4 cup shredded Cheddar
2 tablespoons chopped cilantro
Kosher salt and freshly ground black pepper
36 square wonton wrappers
4 cups canola oil
Chipotle Dipping Sauce, for serving, recipe follows
Chipotle Dipping Sauce:
1/2 cup mayonnaise
1/2 cup sour cream
1 tablespoon honey
2 chipotle chiles in adobo
Juice of 1/2 lime
Pinch of kosher salt
Directions
In a medium bowl, combine the beef, onions, breadcrumbs, taco seasoning, the whole egg, cream cheese, Cheddar, cilantro and some salt and pepper.
Line a baking sheet with parchment paper and set aside. Place the wonton wrappers on a dry work surface. Place 1 mounded teaspoon of the meat mixture in the middle of each wonton. Using a pastry brush, brush the wonton's edges with the beaten egg white. Fold the wrapper to form a triangle and press to seal. Place the wontons on the prepared baking sheet. Cover with plastic wrap and refrigerate for 20 minutes.
Line a baking sheet with a wire rack. Preheat the oven to 200 degrees F. Heat the canola oil to 375 degrees F in a medium, heavy bottomed pot. Working in batches, fry the wontons until golden brown, 1 to 2 minutes per side. Drain onto a paper towel lined plate or baking sheet. Transfer to the baking sheet with the rack and hold in the warm oven while you fry the remaining wontons. Serve with Chipotle Dipping Sauce.
Chipotle Dipping Sauce:
Yield: about 1 cup
Combine the mayonnaise, sour cream, honey, chipotles, lime juice and pinch of salt in a food processor and blend until creamy and smooth. Transfer to a squeeze bottle, if you like, or a container and refrigerate until ready to serve.

Ingredients: makes 15-20 tacos
20 white corn tortillas
oil for frying
2 lbs ground beef
1/2 chopped onion
1/2 red bell pepper
1 large tomato
2 tsp garlic powder
1 tsp onion powder
1 tsp oregano
1 tsp black pepper
1 tsp ground cumin
1 tsp chile powder
1 tsp paprika
1 tsp cayanne pepper
salt
1 tbsp cornstarch
for the nacho sauce:
1 tbsp olive oil
2-3 tbsp butter
1/4 chopped onion
1/4 red bell pepper
3 tbsp chopped pickled jalapenos
3 tbsp all purpose flour
1 1/2 cup milk
1/4 cup pickled jalapeno juice
8 oz medium/mild cheddar cheese (MAKE SURE YOU GRATE IT)
toppings:
lettuce
more shredded cheese
sour cream
restaurant style salsa or

Crunchy Taco Cups
Servings - 2 - 3
INGREDIENTS
Water - 1.5 litres
Chicken breast - 980 grams
Salt - 1/2 teaspoon
Butter - 20 grams
Bell pepper - 370 grams
Salt - 1 teaspoon
Chilli flakes - 1 teaspoon
Oregano - 1 teaspoon
Basil - 1/2 teaspoon
Onion powder - 1 teaspoon
Garlic powder - 1 teaspoon
Sea salt - 1/2 teaspoon
Garlic powder - 1/4 teaspoon
Onion powder - 1/4 teaspoon
Paprika - 1/2 teaspoon
Cumin powder - 1/2 teaspoon
Oregano - 1/4 teaspoon
Chilli flakes - 1/2 teaspoon
Black pepper - 1/2 teaspoon
Red chili - 2 teaspoons
Cheddar cheese - 140 grams
Mozzarella cheese - 140 grams
Tortilla
Butter - for brushing
Sour cream - for garnishing
Coriander - for garnishing
PREPARATION
1. Take a heavy skillet, add 1.5 litres water, 980 grams chicken breast, 1/2 teaspoon salt and bring it to a boil.
2. Boil until the chicken is cooked.
3. Remove it from heat and shred the chicken properly.
4. Heat 20 grams butter in a skillet, add 370 grams bell pepper and mix it well.
5. Cook for 8 - 10 minutes on medium heat.
6. Add 1 teaspoon salt, 1 teaspoon chilli flakes, 1 teaspoon oregano, 1/2 teaspoon basil, 1 teaspoon onion powder, 1 teaspoon garlic powder and mix it well.
7. Now, add the cooked chicken and mix it well.
8. Cook for another 3 - 5 minutes on medium heat.
9. Remove it from heat and keep aside.
10. In a bowl, add 1/2 teaspoon sea salt, 1/4 teaspoon garlic powder, 1/4 teaspoon onion powder, 1/2 teaspoon paprika, 1/2 teaspoon cumin powder, 1/4 teaspoon oregano, 1/2 teaspoon chilli flakes, 1/2 teaspoon black pepper, 2 teaspoons red chili and mix it well.
11. In a mixing bowl, add 140 grams cheddar cheese, 140 grams mozzarella cheese, prepared taco seasoning and mix it well.
12. Take a tortilla and cut it into square.
13. Place it in a cup baking tray and shape it into a cup.
14. Add the cooked chicken in it.
15. Top with prepared cheese.
16. Brush it with butter.
17. Preheat the oven to 370°F/190°C. Bake for 20 minutes.
18. Garnish with sour cream and coriander.
19. Serve.

The hard crunchy shell or crispy taco is a Mexican dish made out of maize flour/cornmeal as a main ingredient. Tacos can be Baked or deep fried. Maize flour is rich in dietary fiber & staple in many countries.
This video shows how to make BAKED taco shells at home.
Ingredients:
Maize flour/cornmeal - 1 cup
All purpose flour - 1 cup + for dusting
Salt to taste
Oil - 2 tbsp
Warm water - as required
Bake in a preheated oven for 10-15 minutes* at 180D C
*Time may vary depending on the ovens so please check after 8-10 mins
