How To Make Danish Æbleskiver (Dutch Pancakes) - Easy Christmas Holiday Recipe
Learn how to make Danish æbleskiver (also known as Dutch Pancakes) by following this easy tutorial. This recipe is simple to follow and makes for a perfect Christmas dessert. Æbleskiver is traditionally made using a aebleskive pan (using a knitting needle to turn them), but a takoyaki pan also works well.
In Denmark, æbleskiver are commonly eaten at Christmas (Jule) and in days leading up to it. In December, they are often served with gløgg (Scandinavian mulled wine). They were traditionally cooked with bits of apple (æble) or applesauce inside but these ingredients aren't always included in modern Danish forms of the dish.

Æbleskiver Recipe (Makes approximately 15 pancake balls)
Ingredients:
• 1 large egg
• 1 cup plain flour
• 1 teaspoon baking powder
• 1 teaspoon cardamom
• 1/4 cup of sugar
• 1/4 teaspoon baking soda
• 1 pinch of salt
• 1 cup buttermilk
• butter for frying
• An æbleskive pan
• 1 or 2 long knitting needles or skewers (In Denmark, the Danish cooks traditionally use a knitting needle.)
Directions:
1. Mix the above ingredients using a whisk
2. Place the æbleskive pan on a stove top on a medium heat and lightly oil or butter the pan.
3. Pour in enough mixture to fill about two-thirds of the wells.
4. As soon as they get bubbly around the edge, turn them over quickly.
5. Continue cooking, turning the ball to keep it from burning and it creates the characteristic spherical shape of an æbleskive.
6. Remove all of the æbleskiver from the pan and generously sprinkle with powdered sugar. Traditionally æbleskiver are served with raspberry jam, strawberry jam or sugar.
7. If you want to get creative, you can fill æbleskiver with fruit, chocolate, jam or even cheese.

Ingredients:
1 cup self rising flour or 1 cup all purpose flour + 1/2 teaspoon baking powder and a pinch of salt.
1 1/2 teaspoons sugar
2 eggs, separated
1 cup milk
2 tablespoons unsalted butter, melted
Jam (optional)
Mix the milk, yolks and butter.
Add the milk mixture to the flour. Stir to combine.
Whip the egg whites and sugar to medium peaks.
Fold the meringue into the milk/yolk mixture until combined.
Preheat your pan over medium heat.
Half fill each cavity (about 1 tablespoon)
Add 1/2 tsp (or so) jam then cover with additional batter.
Bake until the top begins to look dry and bubbles are seen throughout.
Flip using a spoon and continue to bake for 1-3 minutes or until golden brown on both sides.
Serve with powdered sugar or dredge in granulated sugar.

EBELSKIVERS | Danish pancakes from the Viking Warriors | 3 WAYS
Have you ever heard about these cute pancakes they've been making in Denmark for centuries? Legend has it the Vikings were the ones who invented this recipe when they wanted to make pancakes but did not have a regular pan so they used their brass helmets and the spherical shaped deserts resulted. You wouldn't think to associate such delicate and adorable snacks to the Vikings warriors, would you? Neither would I!
They are similar in texture to our pancakes but lighter and fluffier because of the folded egg whites. I hope you give these a try and love them as much as we do. If you have kids, this will be their new favorite way of having pancakes, I guarantee.
Since the name aebelskiver literally means apple slice, I have decided to make one of the versions in the video an apple strudel. Plus, it's fall!
Ebelskivers (Danish Pancakes)
Ingredients:
- 3 large eggs, separated
- 2 tbsp. sugar
- ½ tsp salt
- 2 cups/ 240 g AP flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 ¾ cup/ 420 ml buttermilk
- 1 tbsp. butter or coconut oil for brushing the pan
Filling options:
- Nutella
- Apple (1 tbsp. butter, 2 apples - cubed, 1 tbsp. sugar, 1 tsp cinnamon – sauteed for 5-7 min)
Directions:
1. In a medium bowl, sift flour, salt, baking powder, and baking soda. Set aside.
2. Separate eggs. In a medium bowl, whisk egg whites to stiff peaks.
3. Beat egg yolks with sugar.
4. Start adding dry ingredients to the egg yolk mixture in 3 additions, alternating with the buttermilk.
5. Gently fold egg whites into the batter.
6. Heat ebelskiver pan over medium heat. Pan is ready when a drop of water sizzles when added to the pan.
7. Brush pan with butter or coconut oil.
8. If making plain ebelskivers, fill each hole 2/3 full. If filling with Nutella or apple filling (or anything else), fill about 1/3, add the filling, and top to about 2/3 or ¾ or each hole.
9. When the top begins to bubble, after 3 minutes or so (just like regular pancakes), they are ready to be turned. Use a wooden skewer or a chopstick to detach ebelskievers from the sides and then gently turn. Allow another 2 minutes and turn onto a cooling rack or plate. Allow to cool in one layer. They fill flatten if piled on top of each other.
10. Repeat using all atter.
11. Serve sprinkled with powdered sugar or drizzle maple syrup on top.
12. Enjoy!
