INGREDIENTS
CHILI INGREDIENTS
1 (4 pound) whole chicken
6 tablespoons vegetable oil, divided
1 large yellow Spanish onion, chopped
1 jalapeño pepper, seeded and minced
1 poblano, chopped
2 celery stalks, chopped
4 garlic cloves, minced
2 tablespoons ground cumin
1 TB Chili powder
1 TB Paprika
1 TB Mexican oregano
½ head cabbage, sliced
3 boxes chicken stock
1 15 ounce can white kidney beans
Kosher salt and black pepper
FOR SERVING
Fresh cilantro
Avocado
Cabbage
Radish
Limes
COOKING METHOD:
1. Make sofrito in a blender and add to a large stock pot.
2. Add olive oil and fry sofrito until soft and fragrant.
3. Brown the chicken thighs and legs on all sides in a cast-iron pan.
4. Then add chicken stock, chicken legs, thighs, and spices and bring to a simmer. Cook for 30-40 minutes, or until chicken is fully cooked.
5. Brown the pieces of chicken breast in a cast-iron pan and add to the soup.
6. Once cool, shred the chicken and add back to the pot, along with the beans. Bring to a simmer and cook for 5-10 minutes to allow the flavors to marry.
7. Ladle soup into bowls and top with avocado, thinly sliced cabbage, radish and limes.

Chicken Chili Ingredients:
3 Chicken Breast
1 small Onion chopped
1 Jalapeno, chopped
1 Red Bell Pepper
1 Green Bell Pepper
2 Garlic Cloves minced
1 lbs. White Beans, can use canned beans to reduce the cook time
1 15 oz. can Black Beans drained (optional)
1 15 oz. can Kidney Beans drained (optional)
1 15 oz. can diced Tomatoes
1 8 oz. can Tomato Sauce
1 cup cooking Wine
1/4 tsp. Salt
1/4 tsp. Black Pepper
1/2 tsp. Cumin
1 - 2 tbsp. Cinnamon
1/4 cup unsweetened Chocolate, grated finely
1 - 2 tbsp. Chili Powder, to taste
1/4 tsp. Cayenne Pepper or to taste
Sour Cream, (optional), topping
Shredded Cheese, optional

A comforting, easy one-pot black bean chili recipe with plenty of seasoned ground meat and piquant spices. Good old comfort food with just the right amount of heat. It's perfect for a quick weeknight dinner. Chop, pour, simmer, done. On the table in under an hour.

THINGS YOU’LL NEED:
1 tablespoon olive oil
2 jalapeno peppers diced
1 medium onion diced
4 cloves garlic chopped
1.5 pounds ground turkey or use ground beef, ground chicken, or ground pork
3 ounces tomato paste
1 tablespoon chili powder
1 tablespoon ancho powder
1 teaspoon cayenne
1 teaspoon oregano
1 teaspoon cumin
salt and pepper to taste
15 ounces fire roasted tomatoes (1 can)
2 cans black beans drained - 16 ounce cans
2 cups chicken stock or use a good flavored amber colored beer – I used a white ale
Hot Sauce to taste
FOR SERVING: Crumbly white cheese, spicy chili flakes, chopped red onion, fresh chopped parsley
