-Nancy Speicher DPXX20A 3 c Sugar
1 c Evaporated milk
3 tb Butter or margarine
3 tb Light corn syrup
1 c Dates; chopped
1 c Pecans or walnuts; chopped
1 ts Vanilla extract
6 oz Semisweet chocolate pieces
1. In heavy, 3-qt saucepan, combine sugar, milk, butter and corn
syrup. cook over low heat, stirring constantly with a wooden spoon, until sugar dissolves & mixutre comes to boiling; add dates. 2. Cook, stirring occasionally, until candy thermometer registers
238F, or until a little in cold water forms a soft ball.
3. Remove from heat. Add nuts & vanilla. Beat until thick. Turn out
on board; divide in half. Shape each half into a roll 1 3/4" in diameter; wrap in waxed paper; refrigerate at least 1 hour before coating with chocolate. 4. In top of double boiler, melt chocolate pieces over hot, not
boiling, water. Remove from heat. 5. Remove date rolls from refrigerator; spread half of chocolate
over each roll; spreading to coat evenly all over. refrigerate until chocolate is hard; wrap in waxed paper until ready to cut into slices 1/3" thick. Makes 2 1/4 lbs.

Ingredients
2 cups-chopped nuts- almonds, cashews, pistachios, walnuts
2 cups. chopped soft and pulpy dates
2 tsp ghee
1 tbsp - roasted poppy seeds, roasted sesame seeds or desiccated coconut . i have used roasted poppy here
cardamom powder-optional for flavoring.
Method:
Heat 2 tsp ghee in a wide pan, add chopped nuts in a medium flame for 3-4 minutes, keep stirring .You can use any nuts you like. Then add chopped dates, keep stirring until the dates become mushy and mixes well with the nuts.
Once it forms a lump switch of the heat and pour the date nut mixture in to clean surface or a silicone sheet. Grease your hands and knead it well , make 3 balls and form a log shape and roll it on a thin layer of poppy seeds or anything of your choice. Do not cut it now. Wrap it in a foil and let it cool in the refrigerator for 8 hrs. Then take it out and cut it into 3/4 inch slices.

Play a Drum Roll for these Date Rolls. These are absolutely delightful Christmas biscuits! I usually don't make these but since they were requested, I tried them, and I have baked them on multiple occasions simply cause they are delicious! I made a Date paste since that's not easily available where I am. This Date paste wrapped up in the Shortbread cookie pastry make a beautiful pair it— for the eyes and the tongue too :) Set a Date for these swaddled babies! Mog Asum: Let there be Love ❤️

Ingredients:
Makes 30 Date Rolls
(1 US Cup = 240 ml)
For the pastry dough:
270 grams or 2 Cups + 3 Tablespoons All-purpose Flour (Maida)
1/8 teaspoon Salt
90 grams or 3/4 Cup + 2 Tablespoons Powdered Sugar
180 grams or 3/4 Cup Salted Butter (chilled & cut into pieces)
For the filling:
300 grams or 1 & 1/4 Cup Seedless Dates
2 Tablespoons Salted Butter
1/4 teaspoon Cinnamon Powder
Icing Sugar, if desired
Baking instructions:
Preheat the oven at 180°C for 15 minutes.
Bake the Date Rolls at 180°C for 12-15 minutes or till slightly golden brown.
Once baked, let them cool on the counter to room temperature.
