Mutton Curry in Pressure Cooker | आसान प्रेशर कुकर मटन करी | Easy Mutton Curry | Chef Sanjyot Keer
Full written recipe for Mutton Curry (cooker)
Prep time: 10-15 minutes
Cooking time: 25-30 minutes
Serves: 3-4 people
Ingredients:
Marination
MUTTON | मटन 1 KG
SALT | नमक TO TASTE
TURMERIC POWDER | हल्दी पाउडर 1/2 TSP
LEMON JUICE | निंबू का रस 1 TSP
GINGER GARLIC CHILLI PASTE | अदरक लेहसुन और मिर्च की पेस्ट 3 TBSP
CURD | दही 200 GRAMS
Curry
OIL | तेल 2-3 TBSP
GHEE | घी 2-3 TBSP
WHOLE SPICES
CUMIN SEEDS | जीरा 1 TSP
GREEN CARDAMOM | हरी इलायची 2 NOS.
BAY LEAF | तेज पत्ता 2 NOS.
BLACK CARDAMOM | बड़ी इलाइची 1 NO.
CINNAMON STICK | दालचीनी 1 INCH
ONION | प्याज़ 350 GRAMS (SLICE)
GINGER GARLIC CHILLI PASTE | अदरक लेहसुन और मिर्च की पेस्ट 2 TBSP
GREEN CHILLI | हरी मिर्च 2 NOS. (SLIT)
POWDERED SPICES
TURMERIC POWDER | हल्दी पाउडर 1/2 TSP
KASHMIRI RED CHILLI POWDER | कश्मीरी लाल मिर्च पाउडर 2 TBSP
SPICY RED CHILLI | तीखी लाल मिर्च पाउडर 1 TBSP
GARAM MASALA | गरम मसाला 1/2 TSP
HOT WATER | गरम पानी A SPLASH
SALT | नमक TO TASTE
HOT WATER | गरम पानी AS REQUIRED
GARAM MASALA | गरम मसाला A PINCH
ROASTED KASURI METHI POWDER | भुनी हुई कसूरी मेथी का पाउडर A PINCH
LEMON JUICE | निंबू का रस 1 TSP
FRESH CORIANDER | हरा धनिया A LARGE HANDFUL
Method:
Add the mutton into a large bowl along with salt, turmeric powder & the remaining ingredients of the marinade, mix well using your hands, you can marinate the mutton for a few hours if you have the time.
Set a pressure cooker over high flame & add the oil & ghee into it, once the ghee gets hot, add in all the whole spices along with the onions, stir well & cook over high flame until the onions turn golden brown.
Once the onions turn light golden brown, add in the ginger garlic chilli paste & slit green chillies, stir well & continue to cook until the onions turn golden brown.
Further lower the flame & add all the powdered spices, stir & immediately add a splash of hot water & cook the spices for 2-3 minutes until the fat gets separated.
Once the ghee gets separated, add the marinated mutton & salt, stir well & sear the mutton over high flame for 4-5 minutes.
Then add hot water as required to cover the mutton & mix well, put the lid on & cook the mutton over high flame until the first whistle & then set the flame to low & cook for 12-15 minutes, the time taken for the mutton to be cooked will depend upon its quality.
Once cooked, switch off the flame & let the cooker de-pressurize, open the lid after the cooker has de-pressurized & if the mutton hasn’t cooked fully, you can cook it over high flame for a few more minutes until it is done.
Further, switch on the flame to high & stir it well, then add garam masala, roasted kasuri methi powder, lemon juice & fresh coriander, stir & cook for 1-2 minutes.
Your easy mutton curry is ready, serve it hot with rotis & rice.

Dal Gosht Recipe in English:
Ingredients for Dal Gosht:
Oil 1 cup
Ginger garlic paste 1 tbsp
Mutton 800 g
Onion (Sliced) 1 ½ cup
Tomatoes (sliced) 1 cup
Red chili powder 2 tbsp
Red chili flakes 1 tbsp
Salt 1 tsp / to taste
Turmeric powder 1/2 tsp
Coriander powder 1 tbsp
Yellow lentil soaked (Mung Dal) 1 cup
Red lentil soaked (masoor dal) 1 cup
Split chickpeas soaked (chana dal) 1 cup
Water 2 cups + 3 cups
Ingredients for Tarka:
Oil 1/4 cup
Garlic (chopped) 2 tsp
Cumin seeds 1 tsp
Whole dried red button chilies 10-12
Curry leaves 2
Directions for Dal Gosht Preparation:
1. In a pot heat oil and add onion, cook until translucent.
2. Now add mutton and cook until mutton changes color. Add ginger garlic paste and cook for 1-2 minutes.
3. Add tomatoes and cook until tomatoes get soft.
4. Now add red chili powder, red chili flakes, salt, turmeric powder, coriander powder, and cook for 2-3 minutes.
5. Add 2 cups water, cover, and cook until mutton is half done.
6. Now add soaked yellow lentil, red lentil, split chickpeas, and 3 cups of water. Cover and cook for 20 minutes or until dal and meat get tender. Your dal gosht is ready.
7. In a pan heat oil and garlic, cook for a minute. Now add cumin seeds, whole red chilies, and curry leaf, and cook for 1-2 minutes.
8. Pour this prepared tarka over dal gosht and serve. Your Dal gosht is ready.

DHABA MEAT RECIPE

2 Black cardamom, बड़ी इलायची
2-4 Cloves, लॉन्ग
8-10 Black peppercorns, काली मिर्च के दाने
Prepared Ginger Garlic paste, अदरक लहसुन का पेस्ट
5 medium size Onion, chopped, प्याज
Salt to taste, नमक स्वादअनुसार
1 ½ tbsp Coriander powder, धनिया पाउडर
Marinated Mutton, मैरिनेटेड मटन
2-3 cups Water, पानी
Prepared Onion Tomato Masala, तैयार किया हुआ प्याज टमाटर मसाला
For Ginger Garlic Paste
½ inch Ginger, peeled, slice, अदरक
5-6 Garlic cloves, लहसुन
2 Green chillies, हरी मिर्च
For Mutton Marination
800 gms Mutton, with bones, मटन
1 ½ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
1 tsp Turmeric powder, हल्दी पाउडर
Salt to taste, नमक स्वादअनुसार
½ cup Curd, beaten, दही
For Onion Tomato Masala
1 tbsp Oil, तेल
½ tsp Cumin seeds, जीरा
1 tsp Coriander seeds, धनिया के बीज
2 Bay leaf, तेजपत्ता
1 large Onion, chopped, प्याज
2 Green chillies, chopped, हरी मिर्च
½ tbsp Coriander powder, धनिया पाउडर
1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
2 small Tomatoes, chopped, टमाटर
Salt to taste, नमक स्वादअनुसार
Little water, पानी
1 tbsp tender Coriander stems, finely chopped, धनिया के डंठल
For Garnish
1 tsp Dry fenugreek leaves, crushed, कसूरी मेथी
½ inch Ginger, julienned, अदरक
Coriander sprig, धनिया पत्ता
Process
In a cooker, add oil, ghee once it's hot, add black cardamom, cloves, black peppercorns and let it splutter well.
Add ginger garlic paste, onion and saute it well for 5 minutes.
Add salt to taste and saute it until light brown in color. Add coriander powder and mix well.
Add marinated mutton and mix it well. Add water and mix well.
Cover it with a lid and cook on medium flame for 5-6 whistles.
Let it cool at room temperature until pressure inside the cooker goes down naturally.
Open the lid, add prepared onion tomato masala and mix it well.
Just cover it with the lid without a whistle and cook on medium flame for 5-7 minutes .
Transfer it into a serving bowl, garnish it with dry fenugreek leaves, ginger, coriander sprig.
Serve hot with roti or steam rice.
For Ginger Garlic Paste
In a mortar pestle, add ginger, garlic, green chillies and grind it into a rough paste and keep aside for further use.
For Mutton Marination
In a large bowl, add mutton, degi red chilli powder, turmeric powder, salt to taste, curd and marinated well. Keep it for 10-15 minutes.
For Onion Tomato Masala
In a shallow pan, add oil, once it's hot, add cumin seeds, coriander seeds, bay leaf and let it splutter well.
Add onion, green chillies and saute it well, add coriander powder, degi red chilli powder mix it well.
Add tomatoes, salt to taste and saute well. add little water and let it cook on medium flame for 2-4 minutes.
Add tender coriander stems and mix it well.

Ingredients:
-Oil ¼ Cup
-Zeera (Cumin seeds) 2 tsp
-Laung (Cloves) 3
-Darchini (Cinnamon stick) 1
-Pyaz (Onion) chopped 1 large
-Lehsan paste (Garlic paste) 1 tbs
-Tamatar (Tomato) chopped 1 large
-Lal mirch powder (Red chili powder) 1 tsp or to taste
-Namak (Salt) 1 tsp or to taste
-Dhania powder (Coriander powder) 1 tsp
-Haldee powder (Turmeric powder) ½ tsp
-Hari mirch (Green chilies) chopped 2-3
-Chana daal (Split bengal gram) 1 & ½ Cups (soaked & boiled)
-Pani (Water) ½ Cup or as required
-Garam masala powder 1 tsp
Tadka:
-Oil ¼ Cup
-Curry pata (Curry leaves) 9-10
-Kashmiri lal mirch (Kashmiri red chili) powder ½ tsp
-Hara dhania (Fresh coriander) chopped
-Adrak (Ginger) julienne
Directions:
-In pot,add oil,cumin seeds,cloves,cinnamon stick and mix.
-Add onion and fry until light golden.
-Add garlic paste and mix well.
-Add tomato and mix well.
-Add red chili powder,salt,coriander powder,turmeric powder and mix well.
-Add green chilies and mix well,cover and cook on low flame until tomatoes are soft.
-Add boiled split bengal gram and mix well.
-Add water,mix well and cook for 2-3 minutes.
-Add garam masala powder,cover and cook on low flame for 8-10 minutes then mix well & set aside.
For Tadka:
-In small frying pan,add oil and heat it,add curry leaves and mix.
-Turn off the flame,add Kashmiri red chili powder and mix well.
-Add tadka on cooked split Bengal gram.
-Add fresh coriander,ginger & serve!

-Boiled chana daal shamil karein aur ache tarha mix ker lein.
-Pani dal ker mix karein aur 2-3 minutes kliya paka lein.
-Garam masala powder dal ker dhak dein aur halki ancch per 8-10 minutes kliya paka lein phir ache tarhan mix karein & side per rakh dein.
For Tadka:
-Chotay frying pan mein oil dal ker garam karein aur curry pata dal ker mix ker lein.
-Chulha bund ker dein aur Kashmiri lal mirch powder dal ker ache tarhan mix ker lein.
-Tadka ko cooked chana daal per dal dein.
-Hara dhania aur adrak dal ker serve karein.
