How To make Eggnog Truffles
trUFFLES:
2 c Milk chocolate chips
2 tb Butter or margarine
1/2 c Eggnog
CHOCOLATE CUPS:
2 c Semisweet choco chips
1 tb Shortening
CHOCOLATE CUPS: 1. Melt chips with shortening in heavy, small saucepan over very low heat, stirring constantly. 2. Spoon about 1/2 tablespoon of the chocolate mixture into each of about 36 small foil candy cups. With back of spoon, bring some of the chocolate up side of each cup. Refrigerate until firm. trUFFLES: 1. Melt chips with butter and eggnog in heavy, medium saucepan over low heat, stirring occasionally. Pour into pie pan. Refrigerate until mixture is thick, but soft, about 2 hours. 2. Spoon truffle mixture into pastry bag fitted with large star tip. Pipe mixture into chocolate cups. 3. Truffles can be refrigerated 2-3 days or frozen several weeks. Hint: To remove foil cups, cut slit in bottom of the cup and peel foil up from bottom. Doi not peel down from the top edge. Makes about 36 truffles.

INGREDIENTS
16 oz (454g) white chocolate, divided
4 oz (114g) of softened cream cheese
¼ cup (32g) powdered sugar
¼ teaspoon nutmeg
If you want, you can add a little more nutmeg to use as a topping
DIRECTIONS
Combine the cream cheese, powdered sugar, and nutmeg.
Melt 10 oz of the white chocolate.
Add the chocolate to the cream cheese mixture and beat until smooth.
Refrigerate the mixture for about 2 hours.
Roll the mixture into balls, then freeze them for about half an hour.
Temper the remaining chocolate.
Dip a ball into the chocolate, let the excess drain, place it on a lined cutting board, and immediately sprinkle it with some nutmeg.

Eggnog truffles
Ingredients:
300 g (10 oz) white chocolate;
1 cup white chocolate, melted;
1/3 cup full-fat cream;
1 tsp rum extract;
½ tsp nutmeg;
a pinch of cinnamon.
Instructions
Mix white chocolate with cream, rum extract, nutmeg and cinnamon. Melt over double boiler or in microwave for about 1 minute, stirring constantly.
Pout into any baking pan and chill for about one hour.
Grease both hands with some vegetable oil. Take a spoonful of truffle mixture and roll it into a ball.
Layer truffle balls on top of parchment covered cutting board and leave in fridge for 1 hour more.
Dip truffles into melted white chocolate, sprinkle with cinnamon and serve when the chocolate shell has solidified.

Super Easy Homemade Eggnog
Yes you need egg yolks to make eggnog. In my opinion this is so easy to make that I think more people should be making their own eggnog instead of buying it. The Holidays can make everyone a little crazy, but it's easier to relax when you're sitting with a nice chilled glass of homemade eggnog.
