How To make Election Day Cake
2 pk Active dry yeast
1 1/2 c Warm water (110 to 115
-degrees) 2 ts Sugar
4 1/2 c Sifted flour
3/4 c Butter OR regular margarine
1 c Sugar
1 ts Salt
1 1/2 ts Ground cinnamon
1/4 ts Ground cloves
1/2 ts Ground nutmeg
1/4 ts Ground mace
2 Eggs
1 1/2 c Raisins
1/2 c Chopped citron
3/4 c Chopped nuts
Confectioners Sugar Frosting Sprinkle yeast on warm water; stir to dissolve. Add 2 tsp sugar and 1-1/2 cup flour and beat well by hand, or 2 minutes with electric mixer at medium speed. Cover and let rise in warm place until bubbly, about 30 minutes.
Meanwhile, cream butter and 1 c sugar until light and fluffy. Sift remaining 3 c flour with salt, cinnamon, cloves, mace and nutmeg. When yeast mixture is bubbly, add eggs to creamed butter and sugar and beat well. Combine with yeast mixture. Add remaining dry ingredients (flour, salt and spices), a little at a time, beating with spoon after each addition. Beat until smooth. Stir in raisins, citron and nuts. Pour into well greased and floured 10" tube pan. Cover and let rise in warm place until doubled, about 1-1/2 hours. Bake in moderate oven (375 degrees) 1 hour. Cool in pan 5 minutes; turn out on rack to finish cooling. While faintly warm, spread with Confectioners Sugar Frosting. Makes 12 to 16 servings. CONFECTIONERS SUGAR FROSTING: To 1 c sifted confectioners sugar, add enough milk or light cream to make mixture of spreading consistency. Add 1/2 tsp vanilla and a dash of salt (or flavor with 1/2 tsp lemon juice and 1/4 tsp grated lemon peel). Stir until smooth. Spread on cake. ELECTION CAKE (adapted for a quicker cake from an 1896 recipe from Fannie Farmer's The Boston Cooking-School Cook Book)
INGREDIENTS
1/2 Cup Butter
2 Eggs
1 Cup (200g) Brown Sugar
1/2 Cup (118ml) Buttermilk
2/3 Cup (106g) Raisins
8 Finely Chopped Dried Figs
1 2/3 Cups (210g) Flour
1 Teaspoon Baking Powder
1/2 Teaspoon Baking Soda
1 Teaspoon Cinnamon
1/4 Teaspoon Cloves
1/4 Teaspoon Mace
1/4 teaspoon Nutmeg
1 Teaspoon Salt
For Whiskey Sauce
2 Cups (240g) Powdered Sugar
1 Teaspoon Vanilla
3 Tablespoons Whiskey
Equipment
A mixing bowl and spoon
9 inch loaf pan (or round cake pan)
METHOD
1. Grease a 9'' loaf pan and set the oven to 350°F/176°C.
2. In a medium bowl, whisk together Flour, baking soda, baking powder, cinnamon, clove, mace and nutmeg. Set aside.
3. In a large bowl, cream together the butter and sugar. Add the Eggs and beat in. Mix the buttermilk, raisins and figs into the batter. Finally, fold in the flour mixture by hand until just incorporated. Pour batter into the prepared loaf pan and bake until an inserted toothpick comes out clean; about 50 minutes.
4. For the whiskey sauce, mix together the powdered sugar, whiskey, and vanilla until creamy. To change the consistency, add more sugar or whiskey.

1931 U.S.A. Election Cake Recipe Our neighbours to the South have a Presidential election this week... So let's harken back to Presidential elections past with this Election Cake Recipe. This is a depression era, prohibition era recipe put out by Aunt Sammy (Uncle Sam's Wife) and the U.S. Government.
Ingredients:
Sponge:
½ yeast cake
½ cup lukewarm water
½ cup flour
½ teaspoon sugar
Rest of the cake:
½ cup butter or other fat
1 cup brown sugar
1 egg
½ cup milk
2 cups sifted flour
1 teaspoon cinnamon
¼ teaspoon cloves
¼ teaspoon nutmeg
1 teaspoon salt
1 cup chopped raisins
½ cup chopped figs or dates
Method:
To make the sponge, soften the yeast in the lukewarm water, add the flour and sugar, and beat well.
Put aside in a warm place to lighten for an hour.
In the mean time mix the fat and sugar and add the beaten egg and the milk.
Sift together the flour, spices, and salt.
Then combine all the ingredients including the sponge and mix well.
Pour the batter into a well greased tube pan.
Cover and stand in a warm place to rise for 3 or 4 hours.
Bake one hour in a moderate oven (350ºF).
