One of my favorite family cookies we made around the holidays, made vegan and gluten free: Chocolate No Bake Cookies! These are a favorite around our house and so addicting. These aren't just for the holidays: since they are no bake, they are also perfect for summer treats.

No bake Eskimo cookie balls *Food Friday 12*
Here is a family favorite! Great for the chocolate lover in the family!
No bake eskimo cookies
Also called hay stackes and no bakes :)
You will need:
3/4 cup butter (1 1/2 sticks butter)
3/4 cup white sugar
3 tablespoons unsweetened cocoa powder
1/2 teaspoon vanilla extract
1 tablespoon water
2 cups rolled oats
1/3 cup confectioners sugar for decoration (powdered sugar)
Soften butter and beat well.
Add sugar and mix well.
Add cocoa, vanilla and water.
Then add oatmeal.
Shape into balls and roll in confectioners sugar.
Keep in refrigerator!!!!!
Let bind in fridge for at least 2 hours before eating :)
