How To make Eva's Beans
1 lb Pinto beans *
1 lg White onion, chopped
4 To 5 fresh tomatoes, peeled,
-seeded and chopped ** 1 lb Lean bacon, cut into squares
1 tb Mexican oregano
1 Sprig Epasote
1 tb Ground cumin
12 oz Beer
Water *** 1 bn Cilantro, chopped
2 To 12 fresh jalapeno
-peppers, seeded, cut into -fine slivers. Salt to taste *(NOT soaked, but rinsed well, and the rocks, etc.picked out) ** (substitute canned, if you like) *** to cover the beans by about 2 inches (you may need to add more HOT water as they cook) In a large pot, put the beans, bacon, oregano and cumin. Add the beer, and water. Simmer until the beans are almost tender (maybe 1 - 1 1/2 hours). Add the tomatoes and jalapenos, and cook until beans are fully tender. Add the cilantro, and re-heat for about a half hour. Salt to taste. These make a good basic bean. If you want a bean soup, remove about a quarter of the beans, and mash with a potato masher. Return to the pot. Eva insisted that these beans HAD to be consumed the same day they were cooked. I've found they will be almost as good reheated the next day, and if drained of most of their liquid, they make killer refried beans. She served them as a separate course, after the meat -- I like them as an accompaniment to grilled or barbecued meat, or as a meal in themselves, when served with a lot of fresh tortillas or homemade bread. RECIPE: Eva Longoria's Enchiladas Rojas
Ingredients
10 medium tomatoes, quartered
10 dried ancho chiles
8 garlic cloves
1 cup chicken broth from cooked chicken, or store bought
1 1/4 cups vegetable oil or as needed
Kosher salt to taste
About 48 corn tortillas
1 4-pound whole chicken, poached and shredded
1 yellow onion, finely chopped (optional)
3 cups grated or crumbled queso fresco or shredded Mexican cheese
Mexican rice, for serving
Refried Beans, for serving
Preparation:
For the sauce: place the tomatoes and chiles in a large saucepan and cover with cold water. Bring to a boil and cook gently until the chiles are tender, about 10 minutes. Drain and remove the stems from the chiles. Working in batches if necessary, place the tomatoes, chiles, garlic and chicken broth in the work bowl of a food processor. Process until well pured.
In a large skillet, heat cup of the oil over medium heat until shimmery and hot but not smoking. Add the sauce and bring to a simmer. Simmer for 10 minutes. Remove the sauce from the heat. Set aside until cool.
For the enchiladas: Line baking sheet or platter with paper towels. In a small skillet, heat 1 cup of oil until shimmery and hot but not smoking. Lightly fry the tortillas one at a time just until softened, 5 to 10 seconds per side. Transfer to the paper towel-lined pan to drain.
Preheat the oven to 350 F.
Lightly coat one of two baking dishes with cooking spray.
Working with one tortilla at a time, dip a tortilla in the red sauce, lightly soaking both sides completely. Place the tortilla in baking dish and arrange about 1 tablespoon of chicken in a line just above the center of the tortilla. Sprinkle over a bit of onion, if desired. Tightly roll up the tortilla and place it at one end of the baking dish. Repeat with all of the tortillas until all the enchiladas are snug in the dish. Use a second baking dish if necessary.
When all of the enchiladas are rolled and snug in a baking dish, pour over any remaining sauce. Sprinkle the cheese over the top and cover the pan(s) with foil.
Place the baking dishes in the oven until the cheese is melted and the enchiladas are heated through, 15 to 20 minutes. Remove from the oven.
Serve directly from the dish, using a spatula to scoop out the enchiladas. Serve with Mexican rice and refried beans.

bihon is a filipino noodle dish and is astaple second to rice...
ingredidents:
- 1 lb bihon or stick rice noodles
- 1/2 lb minced beef
- 1 medium size onion (chopped)
- 1/2 tbsp garlic (minced)
- 1 cup carrots
- 1/2 lb bean sprouted
- 1/8 lb french bean
- 1/8 lb snow peas
- 1 cup celery
- 1/2 chicken broth
- 2 or 3 tbsp dark soy sauce
- 3 cups water
procedure:
1. in a large pot, saute the garlic and onion
2. add the pork then let cook for 2 minutes
3. then in the carrots, french bean, snow peas, celery ,and bean sprouted and simmer for 5 minutes.
4.remove all the ingredients in the pot except for the liquid and set them aside.
5.in the pot with the liquid add the chicken broth, oyster sauce, dark soy sauce and mix well, add the bihon then cook for 5 to 10 miutes.
6. put in the vegetables and meat that were previously cooked and simmer for a minute.
7.serve hot....share and enjoy eating!
