Ah yes, the TexMex classic, fajitas. We all know it. We all love it. However, going out with friends and family trying to enjoy a steamy plate of meat, beans, vegetables, and warm tortillas that you just want to cuddle up in are so darn expensive!! Enough is enough of spending over 15 bucks a serving for fajitas. That's why we are making chicken fajitas at home, but wayyyy cheaper. Like $4 per serving cheaper.

Chicken breast recipe | How to make chicken fajitas | One pan chicken and veggies | Mexican chicken fajitas recipe
When it comes to weeknight chicken recipes, chicken fajitas always tops my list. This almost authentic chicken fajita recipe is the best I've made so far. Tried to make this as authentic as possible although I could not find ancho chile anywhere ☹️ so substituted with chilli flakes instead. If you can get your hands on it, do you that instead.
This recipe is perfect for meal prep as you can make so many other dishes with it. I love stuffing it into a tortilla, wrapping it in lettuce or enjoy it over a bowl of warm buttered rice. Trust me, once you give it a try, you'll want to eat it every week too!
Ingredients:
500g/1 lb boneless chicken breast or thighs
3 bell peppers (I used red, yellow and green)
1 onion (red or yellow)
1/4 cup cooking oil
4 cloves garlic
1/2 tsp cumin seeds
5 black peppercorns
1 tsp oregano
1 tbsp red chilli flakes (use ancho chille if available)
1/4 cup lemon juice
Tips:
• Prepare a large batch so you have leftovers because leftovers taste even better!
• Pair it with tortilla, salsa, sour cream and guac/over rice/as is
• Marinade it for an hour if you're not short on time
• Chicken thighs are better for tender meat
• You can use a grill pan if you don't have a skillet to get nice charring around the meat and veggies

Can I use beef instead of chicken?
Yes you can a beef chuck roast. Follow all the same directions.
Can I use frozen chicken breast to make fajitas?
Absolutely. Frozen chicken breasts are usually smaller than their fresh counterparts so the cooking time should be the same.
How do I store leftovers?
Leftover fajita filling can be be stored in an airtight container in the refrigerator for 2 days. To freeze, allow mixture to cool. Place fajita mixture in a freezer-safe zip top bag and spread the bag so it flattens out and the fajita mixture is evenly distributed. This will keep for 2 months.
What can I serve with Chicken Fajitas?
Serve with a salad and some SPANISH RICE and dinner is served!

fresh lime juice
Ingredients needed to make chicken fajitas: red, yellow, green bell peppers, onion, garlic, salsa, boneless, skinless chicken breasts, fajita seasoning, fresh lime juice
HOW TO MAKE CROCK POT CHICKEN FAJITAS:
Pour half of the salsa into the bottom of the crock pot.

Top with half of the sliced peppers and sliced onions. Sprinkle on minced garlic.

Then top with chicken breasts

Sprinkle the tops of the chicken breasts with packet of fajita seasoning.

Top chicken breasts with remaining salsa, peppers, onions. Squeeze lime juice over the top.

Cover and cook on low for 6-8 hours (or high heat for 3-4 hours) until chicken is cooked through.

There will be a lot of juice produced during cooking so you may want to drain that out or use a ladle to remove it (if desired.) Once cooked, remove chicken and shred using a couple of forks.

Put the shredded chicken back into the crock pot, cover and switch it to the warm setting until ready to serve. Give it a taste, you may want to season with salt and pepper.

Set out tortillas, cheese, sour cream and salsa and let everyone help themselves! Serve with a salad or some SPANISH RICE or MEXICAN RICE for a complete meal!
