8 oz Can Tomato Sauce
1/2 c Orange juice
1/2 c Finely chopped Onion
2 tb Raisins
2 tb Chopped Pimento
1/2 ts Oregano, crushed
1/2 ts Chili powder
1 x Clove Garlic, minced
12 oz Chicken Breast Halves *
2 ts Cornstarch
1 tb Water
1/4 c Snipped Parsley
3 c Hot cooked Rice
Several dashes bottled Hot Pepper Sauce * 12 oz boned skinless chicken breast halves, cut into 1" pieces In a large skillet combine tomato sauce, orange juice, onion, raisins, pimiento, oregano, chili pwder, garlic, and hot pepper sauce. Bring to boiling; reduce heat. Cover and simmer 5 minutes. Stir in chicken; return to boiling. Cover and simmer 12-15 minutes more or till chicken is tender and no longer pink. Meanwhile combine cornstarch and water. Stir into skillet. Cook and stir till thickened and bubbly. Cook and stir 2 minutes more. Toss parsley with rice. Serve chicken mixture over rice. ****************************************************************** Per serving: 248 calories, 21 g protein, 35 g carbohydrates, 2 g fat, 49 mg cholesterol, 277 mg sodium, 430 mg potassium.

Full recipe:
Mexican Chicken and Rice Ingredients
• 1/2 cup onions, chopped
• 1 red bell pepper, chopped
• 1 green bell pepper, chopped
• 1 tsp garlic, finely chopped
• 2 tsp fajita seasoning
• 1 cup rice (uncooked)
• 1 cup tomato puree (blend fresh tomatoes or use canned tomatoes)
• 1 cup water
• 1 cup red kidney beans (cooked) (or use black beans)
• 1 cup corn
• 2 tsp lemon juice
• Coriander leaves
Step by step instructions
• Heat 2 tsp of oil over medium-high heat.
• Place the marinated chicken over the pan. Do not overcrowd the pan. I cooked the chicken in two batches.
• Cook until char marks appear on both sides.
• Remove and set it aside on a plate. Same way, cook the next batch of the chicken.
• Heat 2 tsp of oil in the same pan.
• Add onions and bell peppers. Cook until onions are translucent.
• Add garlic, stir and cook for 30 seconds.
• Add fajita seasoning, stir to combine. Cook for a minute.
• Add rice and combine with the spices. Toast it for a minute.
• Add tomato puree, water, beans, and corn. Stir gently to combine.
• Taste and add more salt or pepper if required.
• Add lemon juice (Optional. Add as per taste).
• Let it come to a boil.
• Add the cooked chicken.
• Reduce the heat to low. Cover and cook for 25 minutes.
• Remove from heat. Cover and keep it aside for 10 minutes.
• Mexican chicken and rice is ready to serve.
• Garnish with coriander leaves.
• Serve with lemon wedges. Top it with salsa, sour cream, and avocado slices.

Cooking tips:
• Rice to liquid ratio is important. Add water as per the variety of rice you are using.
• Use a tight-fitting lid to cover the pan. If the steam escapes from the lid then you have to add more water to cook rice.
• Do not stir the rice when it is simmering.
• Do not add lemon juice if tomatoes are sour.

I am cooking the most random meal, I made this up with things I had in my fridge. I was out of cream cheese or I would have added it into this recipe. It turned out great, however, next time I would 100% make this fiesta chicken casserole in the crockpot, shred the chicken, add cream cheese, and it would be even better. It was still SOOO delicious. My crockpot was in storage so I just made chicken cubes.

INGREDIENTS
- 1.25 lbs Cubed Boneless Skinless Chicken Thighs
- Avocado Oil
- Hot Chipotle Dan-Os Seasoning
- Cilantro Lime Rice (2 cups cooked rice, ~1/4 cup chopped cilantro, juice of 1 lime, salt to taste.)
- Black Beans
- Pico De Gallo
- Sour Cream
- Avocado
DIRECTIONS
1. Add Chicken Thighs, Avocado Oil & Seasoning to a bowl. Mix to well combined. Let marinate. Meanwhile prep all other ingredients.
2. Get a large cast iron skillet going on medium heat, add more avocado oil and sear chicken for 12-15 min mixing every few minutes or until largest piece reaches 165 degrees internal.
3. Plate everything up
