How To make Fig Newton Bars
3 c Flour, sifted
1/2 ts Salt
1/2 ts Cinnamon
2/3 c Butter or margarine
1/2 c Brown sugar - dark, firmly
Packed 1/2 c Brown sugar - light, firmly
Packed 2 Egg whites
1 ts Vanilla
**** FIG FILLING **** 3 c Figs, fresh, finely chopped
(see note) 1/4 c Water
2 tb Sugar
2 tb Lemon juice
Sift flour with salt and cinnamon. Cream butter and sugars until very fluffy; beat in egg whites and vanilla. Slowly work in flour; wrap dough and chill 2 to 3 hours. Meanwhile, prepare filling. Simmer the ingredients together, stirring frequently, 5 to 7 minutes until thick. Cool but do not chill. When dough has chilled long enough, preheat oven to 350 degrees. Roll out dough, a small portion at a time, 1/4 inch thick and cut in pieces about 2 1/2 inches wide and 3 inches long. Place a level teaspoon of fig mixture in the center of each and fold dough around filling as though folding a business letter. Flatten cookies slightly and place seam down 1 inch apart on ungreased baking sheets; bake about 12 minutes until lightly browned and just firm. Cool on racks. 3 cups GF Flour
3 tsp Baking Powder
1/2 tsp Salt
10 1/2 Tbsp Butter {about 150 grams}
1/2 cup Honey + 1 Tbsp Molasses {1 cup Brown Sugar}
2 Eggs
1 tsp Vanilla
1/3 cup Milk
Fig Filling:
2 cups dried Figs
1/3 cup Honey {2/3 cup Sugar}
2/3 cup Water
1 Tbsp Lemon Juice
1 Tbsp Butter
Bake 375 F. For 15-18 minutes on parchment lined cookie sheets.

Homemade Fresh Fig Newtons
Ingredients:
For the fresh figs preserves
500 g fresh figs, cut into quaters or chunks
250 g sugar
1 Lemon juice and zest
1 tsp vanilla extract
Add all the ingredients into a pot and cook to a medium heat, cook until preserves have reduced in half for at least 1hr, stirring constantly to avoid the jam to burn the bottom, let cool completely and tranfer to a piping bag, set aside.
For the Cake-y Cookie dough
300 g all purpose flour
140 g butter
70 g sugar
1 tsp baking powder
1/4 tsp salt
1 tsp vanilla extract
1/2 tsp cinnamon
2 Tbsp honey
1 Tbsp milk
3 large eggyolks
Whisk together the flour, salt,cinnamon,and baking powder, set aside.
Place butter and sugar in a mixing bowl, beat until fluffy,, add honey, milk and vanilla until well combined.
Add the yolk one at a time , alternate with flour mixture, do not over mix as the the cookie would lose the cakey-ness.
Bring the dough together and flatten into a disc.wrap in plastic and refrigerate for 1 hour., this makes the dough makes easier to work with.
Assembling the cookies:
Preheat oven to 350 degrees F.
Cut the dough into 3 equal parts.take the 1/3 dough and lightly knead the dough so it is a nit softer and pliable.
Place a sheet of wax paperl and rollnout the soft dough into square.
Trim off the edge, pipe a finger thick strips.
With the help of your wax paper fold dough over the preserves.
Tranfer the logs onto a cookie sheets and flatten it out with your fingers.
Bake for approximately 18 minutes or lightly golden.
Cut the freshly baked bars in 5cm
Note:
when fresh out of the oven, the cookies are still crispy, you shoul allow the cookies to relax overnight.
The figs preserves will soften the crispy cookies and they will have the soft cake like texture we all love.

Old Fashioned Fig Bars Recipe (Vegan)
These healthy old fashioned fig bars are my favorite! The fig bar recipe I’m about to share is super simple, vegan, and healthier than most fig bars and fig newton bars on the market. You will need a few ingredients and 15-20 minutes.
Dough:
150g oat flour
100g peanut flour
1tbsp coconut oil (10ml)
2-3 tbsp (50g) tahini butter
2-3 tbsp (50g) rice syrup
100ml plant milk
A pinch of salt
Fig paste:
200g figs (dried, soaked in boiling water)
50ml water from the figs
10g carob
20g tahini
