How To make Fig Rum Loaf
1 1/2 c Dried figs cut in small part
3 tb Butter
1 1/3 c Boiling water
1 1/2 ts Baking soda
1 ea Egg
1 tb Graded orange peel
1 c Sugar
1/2 ts Salt
2 1/2 c Flour
1 ts Baking powder
3 tb Dark Jamaica rum
3/4 c Chopped walnuts
Preheat oven to 350. Generously grease a 9 X 5 loaf pan for each loaf. Line bottom and sides of pan with waxed paper. Combine figs, sugar, butter and salt in large bowl of electric mixer. Add boiling water. Let cool to room temperature (butter does not have to melt). Sift flour, baking soda and baking powder into medium bowl. Add flour mixture, egg, rum and orange peel to fig mixture and beat with electric mixer at medium speed until well blended. Stir in nuts. Transfer batter to prepared pan, smoothing top. Bake until tester inserted in center comes out clean, about 65 to 75 minutes. Let cool in pan on rack 10 minutes. Remove loaf from pan and discard waxed paper. Let cool completely on rack. Wrap airtight and let stand at least 24 hours before serving. Comments: Really do let age before you eat it; much better on the second day. This really is tasty and is hard not to snack away.

HOW TO MAKE SOFT NO KNEAD FRUIT BREAD
We can make this Sweet Bread or no knead Fruit Yeast Bread in five simple steps
1.Prepare the dough
2.First Proofing
Wrap the bowl with a plastic film and let the dough stand rise in a warm environment for 1 hour or until it gets almost doubled in size.
3.Shape the dough
4.Final rising
Let the dough sit and rise in warm environment for 90 minutes.
5.Bake the Fruit Bread
Bake the Fruit bread at 350 F preheated oven for 34-35 minutes.Reduce the baking temperature to 325 F and bake for another 4-5 minutes
The top of the fruit bread or fruit loaf will start browning at around 25 minutes of baking.It doesn’t mean our dry fruit bread is done.
At this point if we take it out, the center of the fruit yeast bread will have a doughy texture and it will smell very “yeasty”
So wait for until the fruit bread is baked properly.
If you find the top getting too dark, you can tent the top with an aluminum foil at around 25 minutes and then continue baking.

This fruit cake is a simpler and easier version of making a traditional fruit cake or old-fashioned fruit cake.
In this Easy fruit cake recipe we don't need any soaking of dry fruits; but still the raisins,candied peels,cranberries and other dried fruits will be juicy and plumpy as they are boiled in liquid and then added into the cake batter.

Rum Figs Pound Cake Recipe
Ingredients (210×57×60mm × 2)
Cake flour 165g
Baking powder 4g
Unsalted butter 200g
Brown sugar 165g
Eggs 165g
Almond flour 40g
Rum-soaked figs 120g
Rum-soaked figs
Dried figs 100g
Water 40g
Sugar 15g
Rum
Baking: 170°C/338°F 30min
Method:
1. First make the rum figs, boil the sugar, water and figs, turn off the heat and add rum to cool and set aside.
2. Beat the softened butter at room temperature until smooth, add sugar and beat until the volume increases, add the whole egg liquid in small amounts to the whipped butter, and the buttercream reaches a smooth state.
3. Add the sifted almond flour, cake flour and baking powder, fold well, add the cooled rum figs, continue to fold until the batter is smooth, pour into the mold and bake.
4. After baking, heat and melt the sugar and water, brush on the cake, cool, seal and refrigerate overnight for best results.
