How To make Flaming Greek Cheese
1 Kasseri or Kefalotere
Ice water Flour Butter or margarine Lemon juice Cognac Cut Casseri cheese into 1/2-inch slices, allowing about 4 ounces for each serving. Chill slices in ice water. Pat dry and dust with flour. For each serving, melt 3 tablespoons butter until it sizzles but does not brown. Add cheese slices and saute quickly on both sides. Do not overcook or cheese will melt and stick to pan. For each serving, squeeze juice of 1/2 lemon into skillet and sprinkle with a few drops of Cognac. Ignite. Serve cheese when flames die down. Flaming Greek Cheese is a simple and beloved traditional Greek Saganaki recipe, made with only 5 ingredients and ready in less than 10 minutes! The 5 ingredients are : flour, olive oil, cheese, lemon and brandy. What I love the most about Saganaki is its delicious golden crust and how its so irresistibly soft on the inside. I used kafalotyri cheese. Simply delicious!
If you can’t find the above traditional Greek cheese, a thick slice of Monterey Jack, Provolone or Pecorino, will do fine. The cheese must be firm enough to hold-up well against the heat and not fully melt while being fried. It also needs to be soft enough for the inside to become nicely molten and stringy.

‘Saganaki’ refers to various Greek appetizers, which are prepared in a small, two handled heavy bottomed frying pan, itself called a saganaki or sagani. The most common traditional Greek recipes cooked in that kind of pan include mussels saganaki and shrimp saganaki, with the most popular being this simple and delicious fried cheese appetizer (cheese saganaki recipe).
When preparing a Greek saganaki recipe, the key is to pick the right kind of cheese. It has to be firm to hold-up well against the heat. The cheese which is traditionally used in Greek saganaki recipe and are the best options to prepare a cheese saganaki are the Greek cheeses graviera, kefalograviera, kefalotyri, which are hard yellow cheeses, while regional variations may use Cypriot halloumi or mastello from Chios island. Here is the Greek flaming Cheese (Saganaki)
Saganaki is basically a Greek cheese that’s been pan fried. It has a gorgeous crispy crust on the outside and it’s soft melted cheese on the inside. It’s topped with a squeeze of lemon to cut through the richness. It makes the perfect appetizer to start any meal. This version is flambeed with brandy which is not traditional but adds another layer of flavour. Serve it with black kalamata olives, a crisp salad and crusty bread for an amazing experience.
