1/2 lb Ground beef 1/2 lb Ground lamb 6 oz Salted herring 1/2 c Sour cream 3 ea Eggs seperated 4 T Butter 1 ea Onion lg. chopped 3 ea Potatos peeled & boiled 1/2 t Salt 1/2 t Black pepper 2 T Parmesan cheese grated fine 2 T Bread crumbs Put 1 qt of milk into a bowl and soak the herring in it overnight.. remove the and pat dry being sure to remove any and all bones. Coaresly chop the herring. Fry the onions in 2 T of butter until golden. Pan fry the ground meats seperately and place into a food processor/blander. Add the onion, herring, & potatos. Chop/blend untilt soooth mixture is formed. Stir in ther sour cream and egg yolks then add the spices. Beat the egg whites until they are stiff but not dry. Preheat the oven to 400 degrees F. & grease a 2 qt. baking dish. Stir in the egg whites and mix until Fold in the egg whites at this point and turn the mixture into the greased baking dish. Sprinkle with the bread crumbs and parmesan cheese, dot with the remaining butter, & then bake for 40 minutes. Serve hot.

Приготовление: Отвариваем яйца ~8 мин, остужаем, чистим. Яблоко чистим от кожуры и сердцевины. Ломтики хлеба следует замочить в молоке или сливках, потом хорошо отжать и добавить. Я справилась без молока). Лук чистим, режем произвольно. Масло достать из холодильника. Все ингредиенты пробиваем в блендере(можно пропустить через мясорубку): селёдка, яблоко, яйца, лук, хлеб, масло. По вкусу добавляем соль/перец молотый, петрушку или укроп. ✅ Ingredients: • pikled herring filets – 10 oz /300 g • 3 boiled eggs • 1 green apple • white loaf – 2 oz /50 g • bulb onion – 3 oz /100 g • milk – 3 fl oz /100 ml • butter – 4 oz /100 g • lemon juice – ½ lemon

???? Preparation: 1. Hard-boil the eggs and cool. 2. Chop the bulb onion and fry with 1 oz /20 g of butter over medium heat for 2-3 minutes and cool then. 3. Debone the herring and cut into small pieces, lay into a blender bowl. 4. Peel 1 sour green apple, remove the core, dice and lay into the blender bowl. 5. Drizzle with the juice of half of a lemon. 6. Cut 2 slices of white peeled off loaf into small pieces, lay into a bowl and pour with the milk. Then squeeze out and add into the blender bowl. 7. Peel the eggs, cut into small pieces and lay into the blender. 8. Add the fried onion into the blender bowl. 9. Beat all the ingredients well until smooth. 10. Add 3 oz /80 g of softened butter and blend again. 11. Put the forshmak into the fridge for an hour. 12. Serve your forshmak with spring onion, greens and rye bread toasts.
VORSCHMACK | Appetizer of Herring
Vorschmack or forshmak is an originally East European dish made of salty minced fish.
1/2 red onion
Small green apple
Salted herring
3 boiled eggs
30 g butter
Pass all the ingredients through a meat grinder or use a blender.
Dry bread 3-5 minutes each side.
Spread dried bread with mincemeat and garnish with green onions.
